The impact of these stimuli on the decision-making proce·ss is broadly termed sensory evaluation. Advances in sensory evaluation research have been slow in the past because of the human factor-the necessity to use highly trained sensory panels to conduct this research. High technology in strumentation and new understandings of sensory evaluations are now combining to make possible quantum jumps forward in sensory eval uation research. It is widely recognized that the sensory aspects of fruits and vegeta bles are affected by many factors, among them environment, variety, cultural practices, and handling practices. However, if one attempts to find a general reference or compilation of findings regarding this sub ject area there seems to be few, if any, available. A survey of the literature does suggest that in the past few years research into specific factors which influence the sensory aspects of fruits and vegetables has increased significantly. This increased interest in sensory research and the renewed national awareness of the value of research into pre and postharvest quality of fruits and vegetables prompted the Flavor Subdivision, Agricultural and Food Chemistry Division, American Chemical Society to sponsor a symposium entitled "Sensory Evalua tion of Fruits and Vegetables: Effect of Environment, Cultural Prac tices and Variety" during the 1982 meeting in Kansas City, Missouri.

Book excerpt: Providing an updated summary of the application of different types of sensors for the analysis of food safety and quality, this book discusses the core principles, current research status, challenges and successful examples for each technology. In addition, the prospective and future trends for each topic are covered in each chapter. The editor and contributors are all experts in designing and constructing different types of sensors in food analysis, mainly focusing on the determination of food safety and quality. Sensors, as a new generation of detection technique, have many advantages and the application of sensors in food analysis will continue to grow in the next decades. However, until now, there has been no book providing the detailed characterization and summary of sensors in food safety and quality analysis that this book provides. It is vital reading for academic researchers and practising professionals in Food Science, Agricultural Engineering, Biological Systems Engineering, Food Safety, Food Quality and Food Analysis who are using sensors in their work.

Book excerpt: Nowadays, one of the main objectives of the fruit and vegetable industry is to develop innovative novel products with high quality, safety, and optimal nutritional characteristics in order to respond, with efficiency, to increasing consumer expectations. Various unconventional technologies (e.g., pulsed electric field, pulsed light, ultrasound, high pressure, and microwave drying) have emerged and enable the processing of fruits and vegetables in a way that increases their stability while preserving their thermolabile nutrients, flavour, texture, and overall quality. Some of these technologies can also be used for waste and byproduct valorisation. The application of fast noninvasive methods for process control is of great importance for the fruit and vegetable industry. The following Special Issue "Safety, Quality, and Processing of Fruits and Vegetables" consists of 11 papers which represent a high-value contribution to the existing knowledge on safety aspects, quality evaluation, and emerging processing technologies for fruits and vegetables.

With annual losses ranging from 30-40% due to lack of knowledge on proper handling practices and value addition, this book's information on postharvest handling and quality testing is crucial for reducing these losses and improving the quality and safety of fresh fruits in these areas. With its added focus on marketing and organized retail aspects, Postharvest Quality Assurance of Fruits: Practical Approaches for Developing Countries covers the entire range of fruit handling, from transportation and packaging to quality assessment and commercial preparation. In presenting a fully comprehensive outline of the factors affecting postharvest quality and marketability of fruits, this work lays the foundation for understanding the proper storage, transportation and packaging methods to prevent losses and increase quality. With its study of prevailing marketing systems, supply chains and retail methods, the book presents the complete picture for the postharvest handling of fruits in the developing world.

It is a vital job to detect and classify fruits and vegetables from crops and gardens. In fruit detection and yield estimation, an intelligent detection system is used as a key technology where embedded sensor techniques are being implemented. Many researchers developed a different classification system for classifying the fruits or vegetables using image processing techniques and machine learning algorithm. Big computers with fast CPUs and GPUs, massive RAM sizes or cloud algorithms have often been associated with them even simple applications. In this article Tensorflow and Arduino BLE sense are used to identify the fruits and vegetable with less resource.
