Book excerpt: This seminar report discusses the present stage of ethical food labeling and other ethical questions in connection with production of food. Labeling is just one way of providing information; there are many other information channels, such as databases on the Internet, the home pages of organizations and companies, brochures, and the media. Existing labels should be strengthened and developed, but at present it is more important to open up to development, information, and debate about ethical conditions in the production and trade, rather than introducing new ethical labels. In this context, the media have an important role to play. The majority of consumers have an attitude to ethics in the production of food, but few act in accordance with this attitude. Consumers expect that others, i.e. the retail trade, have taken a stance on ethical requirements, and that the products offered in the market respect a reasonable ethical standard. The results of the seminar show that no major breakthrough for ethical concerns in production and consumption can be expected in the short term, especially not at a time characterized by fierce price competition. The consumers' commitment to ethical conditions should, however, be used to stimulate progress and strengthen the competitive position of the companies that have already taken on social responsibility.

The study was conducted in the five Nordic countries Sweden, Norway, Denmark, Finland and Iceland. More than 1,000 interviews were conducted in each country. The results of this survey show that information about ingredients, nutritional contents, "best-before-date", and country of origin must be printed clearly on the food package. This is the "top-of-mind" information Nordic consumers want to see on food labels to be able to make a conscious choice when buying food. Furthermore, a majority of Nordic consumers welcome measures to help consumers to take in information and increase the legibility of food packages. There is strong support for the introduction of a minimum print size and for obligatory labelling information always being laid out in the same format on the package. The purpose of the study was to collect up to date information and knowledge on the needs and attitudes of Nordic consumers regarding food labelling. The study aims to contribute to the preparation for the upcoming European Union revision of the food labelling rules.

Much of the infor- tion available is superficial, conflicting or partial, and it is hard for consumers seeking to mak e informed food choices to know which information to trust. The consumers we interviewed for this project felt that information about food products was withheld and manipulated. Traceability, which provides a record of the history and journey of a given food, and which is increasingly used in the food sector for legal and commercial reasons, has the potential to communicate a more authentic picture of how food is produced.
