It also has an antimicrobial effect against pathogenic bacteria, among which are Listeria monocytogenes, Escherichia coli, Staphylococcus aureus and Salmonella typhimurium. This antimicrobial activity is attributed to the presence of lactic acid bacteria that produce antimicrobial substances such as bacteriocin.
