Afin d'évaluer le risque chronique associé à l'ingestion de ces substances, le développement d'une méthodologie appropriée s'impose. Dans nos travaux, nous proposons une nouvelle approche permettant d'estimer des trajectoires d'exposition vie-entière à un contaminant chimique à l'échelle individuelle. Cette méthode permet de considérer l'évolution des comportements de consommation au cours de la vie, les variations des contaminations alimentaires au cours des décennies, mais aussi la potentielle accumulation vie-entière des substances dans l'organisme. Nous avons retenu trois exemples contrastés de dangers chimiques : le cadmium, les polychlorobiphényles et le bisphénol A. Alors qu'une approche classique se limite à ne pas pouvoir exclure un risque dû à l'ingestion de cadmium pendant l'enfance, notre méthode basée sur des trajectoires d'imprégnation vie-entière prédit une manifestation des effets néfastes du cadmium après 50 ans. Concernant les PCB, nous mettons en évidence un fort impact générationnel sur les expositions alimentaires et les risques associés. Enfin, l'exemple du BPA illustre l'importance de l'étude des expositions aux substances chimiques dès la conception. Ces travaux, permettront de prédire les risques sanitaires associés à la présence de substances chimiques dans les aliments, en fonction du profil sociodémographique vie-entière des individus.

Despite much propaganda to the contrary, there can never be any serious question that pest-control chemicals and food additive chemicals are essential to adequate food production, manufacture, marketing, and storage, yet without continuing surveillance and intelligent control some of those that persist in our foodstuffs could at times conceivably endanger the public health. Ensuring safety-in-use of these many chemicals is a dynamic challenge, for established ones are continually being displaced by newly developed ones more acceptable to food technologists, pharma cologists, toxicologists, and changing pest-control requirements in progressive food-producing economies. These matters are also of genuine concern to increasing numbers of governmental agencies and legislative bodies around the world, for some of these chemicals have resulted in a few mishaps from improper use. Adequate safety-in-use evaluations of any of these chemicals persisting into our food stuffs are not simple matters, and they incorporate the considered judgments of many individuals highly trained in a variety of complex biological, chemical, food technological, medical, pharmacological, and toxicological disciplines.
