A number of factors have contributed to this, including changes in methods of food production and processing, changing consumption patterns, greater consumer awareness of food safety issues and emerging and re-emerging pathogens. Also, the expansion of international trade in food has increased the risk of infectious agents being disseminated from the original point of production to locations thousands of miles away. In addressing this issue at the international level FAO and WHO convened a joint Expert Consultation on Risk Assessment of Microbiological Hazards in Foods from 17 to 21 July 2000 in Rome. The meeting specifically addressed risk assessment of Salmonella spp. in broilers and eggs and Listeria monocytogenes in ready-to-eat foods. This report summarizes its findings and includes advice and guidance on hazard characterization and exposure assessment of these pathogen-commodity combinations for consideration by FAO/WHO Member Countries and the Codex Alimentarius Commission.

The sample for this study of the U.S. population was selected from households in 81 counties across the United States. About 40,000 persons 2 months of age and over were selected, including large samples of both young and old persons. About 12,000 of the sample persons were black Americans, 12,000 were Mexican-Americans, and the remaining 16,000 were of all other race and ethnicity groups. All selected persons were asked to complete an extensive interview and an examination in a large mobile examination center. The survey period is 1988-94, consisting of two phases of equal length and sample size. Both Phase 1 and Phase 2 were random samples of the U.S. population living in households.

This book addresses the question of how we can best feed the ten billion or so people who will likely inhabit the Earth by the middle of the twenty-first century. He asks whether human ingenuity can produce enough food to support healthy and vigorous lives for all these people without irreparably damaging the integrity of the biosphere. What makes this book different from other books on the world food situation is its consideration of the complete food cycle, from agriculture to post-harvest losses and processing to eating and discarding. Taking a scientific approach, Smil espouses neither the catastrophic view that widespread starvation is imminent nor the cornucopian view that welcomes large population increases as the source of endless human inventiveness. He shows how we can make more effective use of current resources and suggests that if we increase farming efficiency, reduce waste, and transform our diets, future needs may not be as great as we anticipate. Smil's message is that the prospects may not be as bright as we would like, but the outlook is hardly disheartening. Although inaction, late action, or misplaced emphasis may bring future troubles, we have the tools to steer a more efficient course. There are no insurmountable biophysical reasons we cannot feed humanity in the decades to come while easing the burden that modern agriculture puts on the biosphere.
