Book excerpt: Excerpt from The Dairy Industry in Missouri and Kansas Not many years ago it was assumed that New England and New York, with perhaps a part of Ohio added, would be able to supply the American demand for dairy products. It was thought that dairying would be mainly confined to the territory indicated, notwithstanding the growth of other sections, because the conditions in the West and South, generally, were deemed so unsuited to this industry as to prevent its extension in those directions. The development of the commercial and manufacturing interests of the East made it soon apparent, however, that the farmers of that region could not supply the demands of its teeming population for food products. Meanwhile emigrants from the Eastern States pushed westward, located in the wooded lands of Ohio and Indiana and on the prairies of Illinois, and then crossed the Mississippi to occupy the fertile lands of the great agricultural basin which includes the States of Missouri and Kansas. Cows came with the settlers and found the natural pasturage and other conditions very favorable to stock raising and milk production. Dairy cattle rapidly increased, and the farmers soon had before them the problem of how to utilize their surplus milk. Eastern demand for butter and cheese was found to increase about as fast, and the recognized "dairy belt" was gradually extended to include Ohio, Indiana, Illinois, Michigan, Wisconsin, and Iowa. It was still maintained that south and west of these States dairying could not be successfully pursued. These views were also destined soon to be proved erroneous. It is now safe to assert that a territory of nearly 100,000,000 acres within the limits of Kansas and Missouri offers as great possibilities for dairying as any equal area on the globe. Such possibilities can only become realities through the abandonment of many ideas as to what were once regarded essentials in dairying, as, for example, that flowing spring water and a reliable supply of ice must be had on every dairy farm; that dairying can be made profitable only with permanent pastures and cultivated grasses, and that the dairyman must be near the consuming market. Book excerpt: Excerpt from Plants Manufacturing Dairy Products, 1957: By Production-Size Groups and Geographic Distribution This rapid change in plant numbers and production has caused an increasing demand for information on size and geographic distribution of plants manufacturing dairy products. Many of the plants shown in this report manufacture several products, so a plant making butter and powdered milk, for example, was counted once as a creamery and again as a powdering plant. Tables and maps are based upon data obtained from the 1957 survey of all dairy manufacturing plants in the United States. In 1957, almost two-thirds of the creameries in the United States had an annual output of less than one-half million pounds of butter, while only 19 percent produced over one million pounds per plant. Yet, the average production per plant for the Nation was slightly over' pounds. In the major producing West North Central region, 60 percent of the plants produced less than one-half million pounds of butter each, 17 percent were in the 1 million to ll million-pound production groups, and less than 2 percent produced over h million pounds. In the East North Central region, the proportion of small plants was about the same as in the West North Central; 57 percent in the less than one-half million-pound groups, 25 percent in the 1 million to 1} million-pound groups, and 5 percent in the over 1] million-pound group. Three fifths of the creameries in Minnesota, the most important butter-producing State in 1957, made less than one-half million pounds each, 15 percent made from 1 to 1} million pounds, and only 2 plants made over 1+ million pounds. In Wisconsin, which is fast approaching Minnesota in butter output, only E3 percent of the creameries fell in the less than one-half million-pound groups, while over 31 percent produced from 1 million to h million pounds, and 7 percent, or 111 plants, made over it million pounds of butter.
