Book excerpt: To meet growing demand, the FAO has estimated that world poultry production needs to grow by 2-3% per year to 2030. Much of the increase in output already achieved has been as a result of improvements in commercial breeds combined with rearing in more intensive production systems. However, more intensive systems have increased the risk of transmission of animal diseases and zoonoses. Consumer expectations of sensory and nutritional quality have never been higher. At the same time consumers are more concerned about the environmental impact of poultry production as well as animal welfare. Drawing on an international range of expertise, this book reviews research on poultry breeding and nutrition. The first part of the book reviews how advances in genetics have impacted developments in breeding. Part 2 discusses ways of optimising poultry nutrition to ensure quality and sustainability in poultry meat production. Chapters review the use of feedstuffs and ingredients such as amino acids, enzymes and probiotics as well as feed formulation and safety. Achieving sustainable production of poultry meat Volume 2: Breeding and nutrition will be a standard reference for poultry and food scientists in universities, government and other research centres and companies involved in poultry production. It is accompanied by two further volumes which review safety, quality and sustainability as well as poultry health and welfare.

Available in PDF, EPUB and Kindle. Book excerpt: This book aims to reconstruct the activities of enterprises and individuals over two decades in one developing country (Hungary), within and across four politico-economic domains (agriculture, infrastructure/construction, commerce, and manufacturing), from the initial Stalinist obsession with heavy industry through later reforms paying greater attention to profitable farming and the provision of abundant consumer goods. It provides hundreds of grounded, granular stories for reflection, as reported by actors and direct observers, ranging from innovation and improvisation to obstruction, failure, and fraud. Further, it offers an otherwise-unobtainable close encounter with another world, familiar in some respects while amazingly peculiar in others. The social history of enterprise and work in postwar Central European nations “building socialism” has long been underdeveloped. Through extensive macro-level research on planning and policy in Hungary, Poland, Czechoslovakia, and other Bloc countries, a grand narrative has been framed: reconstruction and breakneck industrialization under Soviet tutelage; then eventual mismanagement, stagnation and crisis, leading to collapse. This book seeks to explore what socialism actually looked like to those sustaining (or enduring} it as they faced forward into an unknowable future, to assess how and where it did (or didn’t) work, and to recount how ordinary people responded to its opportunities and constraints. This study will appeal to readers interested in a understanding how businesses worked day-to-day in a planned economy, how enterprise practices and technological strategies shifted during the first postwar generation, how novice managers and technicians emerged during rapid industrialization, how peasants learned to farm cooperatively, how organizations improvised and adapted, how political purity and practical expertise contended for control, and how the controversies and convulsions of the postwar decades shaped a deeply flawed project to “build socialism.”

Available in PDF, EPUB and Kindle. Book excerpt: Chickens are now the most scientifically engineered of livestock. How have the methods used by geneticists differed from those employed by domestic breeders over time? Art and Science in Breeding details the relationship between farm practices and agricultural genetics in poultry breeding from 1850 to 1960. Margaret E. Derry traces the history and organization of chicken breeding in North America, from craft approaches and breeding as an ‘art,’ to the conflicts that had emerged between traditional and scientific methods by the 1940s. Derry assesses links between the 'scientific' revolution of chicken farming and the development of corporate breeding as a modern, international industry. Using poultry as a case study for the wider narrative of agricultural genetics, Art and Science in Breeding adds considerable knowledge to a rapidly growing field of inquiry.
