In this edition, however, it emerges as a work of a somewhat different order. Like all good books which deal with a progressive subject, it has felt the growth impulse, and, notwithstanding the exceptional nature of the times, material for growth has during the last few years accumulated in abundance. If this edition has largely out grown its predecessors the increase is not only desirable, but, in my Opinion, necessary. Progress in any science calls continuously for new methods, and for extension and improvement in technique. In the growth of any branch of knowledge there are, indeed, periods when the development of technique becomes the most pressing of needs, and its success the best measure of progress. Biochemistry has been successfully passing through such a period. Its methods have been greatly multiplied, extended and improved. We are now beginning to reap the reward in the accumulation of accurate quantitative data. One need peculiar to biochemistry, that of following changes in living tissues without terminating the life of the animal, or harming the human subject, has now been largely met, at least so far as studies of the blood are concerned. This is due to the success of micro-methods of analysis. 80 significant are some of the results which can be obtained that we may hope to see the methods become as general in connexion with medical diagnosis as the use of the stethoscope or the electrocardiogram. The Chapter on Metabolism consists in large part of directions for typical metabolism tests which may be conducted by the student in order to demonstrate important principles of metabolism. The Chapter on Blood Analysis includes the most recent methods which have played such an important part in adding to our knowledge regarding the composition of the blood under normal and pathological conditions. The Chapter on Gastric Analysis includes a general discussion of titratable acidity and hydrogen-ion concentration as well as an exposition of the Fractional Method of Gastric Analysis which was elaborated in the authors laboratory by Dr. Martin E. Rehfuss, and which has been very widely adopted. The Chapter on Nucleic Acids and Nucleoproteins is a brief discussion of basic facts accompanied by experiments suitable for student use. In order to facilitate the selection of tests and methods for courses in which but little time is devoted to the subject, the actual laboratory procedure involved in such tests and methods as the author considers most important has been printed in black face type to differentiate such tests and methods from those which he considers of less importance, which are set in small type. In certain instances, however, tests and methods which the author believes to be of first importance, but which are not so readily adapted to student use, have been printed in small type. The latest and best methods of quantitative analysis have been introduced throughout the volume. The nephelometer has been discussed and certain nephelometric methods described. The subject matter is practically limited to experiments and deductions from the experiments, and is not meant to supply the full and ordered information obtainable from a text-book of physiological chemistry. The arrangement of the work differs from that generally followed, in that the student is at the outset provided with substances familiar to him, such as a potato, an egg, lard, butter, etc. From these he prepares, by simple chemical manipulations, the proximate constituents and their decomposition products, and studies their chemical reactions and physical properties. In this way he is introduced to the subject without interposing complex chemical conceptions, which the usual arrangement of dividing the subject into the study of carbohydrates, fats, and proteins necessarily involves. In teaching practical physiological chemistry to students, who have had only an elementary training in organic chemistry, it seems on the whole more satisfactory and more scientific to impose no tax on the faith of the pupil, even if the work covered is less comprehensive than it might otherwise be. The knowledge acquired in such a course as outlined in this book is at least real, and questions beyond the scope of personal demonstrations by the student may well be left to treatment in lectures. Little by little, there has developed a sharp distinction between pure physiology and physiological chemistry. It is clear that an artificial separation of two such closely related fields of investiga tion must work to disadvantage for the development of each, so that it is fortunate to find it recognized more and more that the whole science of physiology can only develop satisfactorily when there is an intimate exchange of ideas between investigators in the two fields. The chemical decompositions in the tissues do not take place beside the physiological processes, but are bound up with them. In no single case can we carry out any distinction-in such a sense; and with those organs in which the relations between the functions and the metabolism are not known, this is chiefly because of our limited knowledge concerning the latter. Forgotten Books uses state-of-the-art technology to digitally reconstruct the work, preserving the original format whilst repairing imperfections present in the aged copy. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in our edition. We do, however, repair the vast majority of imperfections successfully; any imperfections that remain are intentionally left to preserve the state of such historical works.
