Book excerpt: Incorporating research chapters from academic authors around the world, this book focuses on the most recent scientific advances in understanding phytate; both IP6 and its esters. It examines phytate degradation patterns in the gastrointestinal tract, and investigates the relevance of gut microbiome and endogenous phosphatases on phytate breakdown, as well as regulation and functions of inositol diphosphates IP3, IP4, and IP7, IP8. It also identifies recommendations for formulating for minerals and amino acids in the presence of phytate, including the effects of phytase on protein bioavailability, and the impact of digestible Ca and P in both swine and poultry. This leading science and research is coupled with real-world pragmatism, including a focus on what industry stakeholders are currently doing to counter dietary phytate, and an overview of the role of nutrition in respect of bone health, meat quality, welfare, and antibiotic free production. As such, the content is relevant for scientists, nutritionists and producers alike.

Book excerpt: Phosphates in Food provides the first comprehensive analysis of phosphates used in food processing in almost 20 years. The book describes the nomenclature, structure, chemistry, and analytical procedures for phosphates in foods. Interactions between added and some natural phosphates and food components (particularly proteins, carbohydrates, lipids, and metal ions) are examined in relation to using phosphates in food processing for such purposes as increasing the water-holding capacity of proteins, improving emulsification, preventing gelation, and delaying lipid oxidation. The book also discusses the use of phosphates in specific food groups, such as milk and dairy products; meats, poultry, and fish; fruits and vegetables; bakery products and cereals; and miscellaneous food products including beverages, fats and oils, sugar and confectionery products, eggs and derivatives, and specialty products. An extensive section discussing the importance of phosphates as microbial agents is presented and is followed by a final section that examines the nutritional and health implications of elevated phosphate intake. The book contains 1,135 references, 43 tables, and 34 figures, making it an ideal reference resource for researchers in food sciences, microbiology, and nutrition; food and chemical industries; and regulatory agencies within local, state, and federal governments.

Book excerpt: Dr. Vic Shayne's new book is based on years of research to prove that vitamins fail to act as nutrients unless still contained in natureês original whole foods. For the millions of us who see the importance of taking supplements, this book offers secrets that vitamin companies would rather not be published. Nature's wondrous healing and life-sustaining power resides within whole foods, not vitamins alone. With every disease and symptom is associated a nutritional deficiency, and we need much more than isolated vitamins to make us well. In this age of refined, altered and chemicalized diets and exposure to environmental toxins, our cells demand whole food supplementation for real nutrients that vitamin pills alone cannot begin to offer us. Vitamins need synergists to function. The difference between illness and health is often just a few nutrients away. The more we know, the more control we have over our own health.

This book was released on 2021-07-15 with total page 98 pages. Available in PDF, EPUB and Kindle. Book excerpt: Antimicrobial resistance is a global and increasing threat. Stewardship campaigns have been established, and policies implemented, to safeguard the appropriate use of antimicrobials in humans, animals, and plants. Restrictions on their use in animal production are on the agenda worldwide. Producers are investing in measures, involving biosecurity, genetics, health care, farm management, animal welfare, and nutrition, to prevent diseases and minimize the use of antimicrobials. Functional animal nutrition to promote animal health is one of the tools available to decrease the need for antimicrobials in animal production. Nutrition affects the critical functions required for host defence and disease resistance. Animal nutrition strategies should therefore aim to support these host defence systems and reduce the risk of the presence in feed and water of potentially harmful substances, such as mycotoxins, anti-nutritional factors and pathogenic bacteria and other microbes. General dietary measures to promote gastrointestinal tract health include the selective use of a combination of feed additives and feed ingredients to stabilize the intestinal microbiota and support mucosal barrier function. This knowledge, used to establish best practices in animal nutrition, could allow the adoption of strategies to reduce the need for antimicrobials and contain antimicrobial resistance.
