Book Synopsis Molecular Wine Microbiology by : Alfonso V. Carrascosa Santiago
Download or read book Molecular Wine Microbiology written by Alfonso V. Carrascosa Santiago and published by Academic Press. This book was released on 2011-05-23 with total page 373 pages. Available in PDF, EPUB and Kindle. Book excerpt: Molecular Wine Microbiology features rigorous scientific content written at a level comprehensible for wine professionals as well as advanced students. It includes information on production and spoilage issues, the microbial groups relevant for wine production and microbial wine safety. Microbiology has long been recognized as a key tool in studying wine production, however only recently have wine microbiology studies been addressed at a molecular level, increasing the understanding of how microbiology impacts not only the flavor quality of the wine, but also its safety. Understanding, at a molecular level, how a starter culture can impact ethanol, glycerol, volatile phenols, mannoproteins, biogenic amines or ochratoxin A of a wine are just some of the core points that must be considered in order to achieve maximium consumer acceptability while addressing safety concerns during processing and storage. While other books offer insights into the technological aspects of enology, this book is written by expert microbiologists, who explore the positive and negative impacts of gene function in the production of wine, from a microbiological point of view. - Winner of the 2012 Jury Award in Enology from the International Organisation of Vine and Wine - Presents the most current methods of studying the microbiology of wine - Includes latest identification and typing methods, reducing identification time from days and weeks to minutes and hours - Provides important knowledge about the impact of microbiological factors at the molecular level for reduction of wine spoilage and increased wine quality and safety

Download or read book Nutrition in Health and Disease written by Gyula Mozsik and published by BoD – Books on Demand. This book was released on 2019-10-09 with total page 246 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book deals with very different aspects of nutrition from different countries (qualities and quantities of food, their absorptions from the gastrointestinal tract, utilization in healthy human beings or in patients with different diseases, food and drug interactions, etc.). However, these different nutritional positions are different in the different countries. The 13 chapters were written by experts from countries in four continents (Asia, Africa, America, and Europe) and generally cover one nutritional problem each; however, if we analyze the results of all the chapters, we can see the most important nutritional problems from all over the world. This detailed analysis offers us an overview of this most urgent nutritional problem. We know that the world's population has increased exponentially in the last few decades (and is still increasing); however, foods and food products have increased more slowly. We have to solve these and other nutritional problems to ensure the health of generations to come.

Book Synopsis Fruit Preservation by : Amauri Rosenthal
Download or read book Fruit Preservation written by Amauri Rosenthal and published by Springer. This book was released on 2018-11-05 with total page 543 pages. Available in PDF, EPUB and Kindle. Book excerpt: Fruits and fruit based products are, in most cases, associated with very good sensory characteristics, health, well-being, perishability, relatively easy to mix with food products of diverse origin, amenable to be processed by conventional and novel technologies. Given the multiplicity of aspects whenever fruit preservation is considered, the editors took the challenge of covering in a thorough, comprehensive manner most aspects dealing with this topic. To accomplish these goals, the editors invited well known colleagues with expertise in specific disciplines associated with fruit preservation to contribute chapters to this book. Eighteen chapters were assembled in a sequence that would facilitate, like building blocks, to have at the same time, a birds-eye view and an in-depth coverage of traditional and novel technologies to preserve fruits. Even though processing took center stage in this book, ample space was dedicated to other relevant and timely topics on fruit preservation such as safety, consumer perception, sensory and health aspects. FEATURES: Traditional and Novel Technologies to Process Fruits Microwaves Ohmic Heating UV-C light Irradiation High Pressure Pulsed Electric Fields Ultrasound Vacuum Impregnation Membranes Ozone Hurdle Technology Topics Associated with Fruit Preservation Safety Nutrition and Health Consumer Perception Sensory Minimal Processing Packaging Unit Operations for Fruit Processing Cooling and Freezing Dehydration Frying

Download or read book Salmonella written by Dr. Barakat S M Mahmoud and published by BoD – Books on Demand. This book was released on 2012-01-20 with total page 454 pages. Available in PDF, EPUB and Kindle. Book excerpt: More than 2,500 serotypes of Salmonella exist. However, only some of these serotypes have been frequently associated with food-borne illnesses. Salmonella is the second most dominant bacterial cause of food-borne gastroenteritis worldwide. Often, most people who suffer from Salmonella infections have temporary gastroenteritis, which usually does not require treatment. However, when infection becomes invasive, antimicrobial treatment is mandatory. Symptoms generally occur 8 to 72 hours after ingestion of the pathogen and can last 3 to 5 days. Children, the elderly, and immunocompromised individuals are the most susceptible to salmonellosis infections. The annual economic cost due to food-borne Salmonella infections in the United States alone is estimated at $2.4 billion, with an estimated 1.4 million cases of salmonellosis and more than 500 deaths annually. This book contains nineteen chapters which cover a range of different topics, such as the role of foods in Salmonella infections, food-borne outbreaks caused by Salmonella, biofilm formation, antimicrobial drug resistance of Salmonella isolates, methods for controlling Salmonella in food, and Salmonella isolation and identification methods.
