Available in PDF, EPUB and Kindle. Book excerpt: Current levels of meat consumption in the EU are unsustainably high. One potential policymeasure to address this problem is the introduction of a Pigouvian tax to internalize negativeeffects of meat consumption on the environment and public health. Since such a tax has not yetbeen introduced in any country, assessing the effects of such a tax ex-ante is useful to evaluateits potential effectiveness. By performing fixed effects regressions, I analyze the responsivenessof EU consumers' meat demand to changes in meat prices and income. Furthermore, I explorethe influence of other factors on meat demand such as demographics, urbanization and incomeinequality. I find beef to be most and pork to be least responsive to price changes, with all typesof meat being both price and income inelastic. Furthermore, a tax on meat consumption mightreduce total demand in the EU by up to 5.13 kg per capita, which is a reduction of 7.68%.Related greenhouse gas emissions from agriculture might thus be reduced by up to 12.55%.

Book excerpt: The analysis of meat and its place in Western culture has been central to Human-Animal Studies as a field. It is even more urgent now as global meat and dairy production are projected to rise dramatically by 2050. While the term ‘carnism’ denotes the invisible belief system (or ideology) that naturalizes and normalizes meat consumption, in this volume we focus on ‘meat culture’, which refers to all the tangible and practical forms through which carnist ideology is expressed and lived. Featuring new work from leading Australasian, European and North American scholars, Meat Culture, edited by Annie Potts, interrogates the representations and discourses, practices and behaviours, diets and tastes that generate shared beliefs about, perspectives on and experiences of meat in the 21st century.

This book was released on 2018-07-27 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume of the IARC Monographs provides evaluations of the consumption of red meat and the consumption of processed meat. Red meat refers to unprocessed mammalian muscle meat (e.g. beef, veal, pork, lamb) including that which may be minced or frozen. Processed meat refers to meat that has been transformed through salting, curing, fermentation, smoking or other processes to enhance flavor or improve preservation. Most processed meats contain pork or beef, but may also contain other meats including poultry and offal (e.g. liver) or meat by-products such as blood. Red meat contains proteins of high biological value, and important micronutrients such as B vitamins, iron (both free iron and haem iron), and zinc. Carcinogens, including heterocyclic aromatic amines and polycyclic aromatic hydrocarbons, can be produced by cooking of meat, with greatest amounts generated at high temperatures by pan-frying, grilling, or barbecuing. Meat processing such as curing and smoking can result in formation of carcinogenic chemicals including N-nitroso compounds and polycyclic aromatic hydrocarbons. An IARC Monographs Working Group reviewed epidemiological evidence, animal bioassays, and mechanistic and other relevant data to reach conclusions as to the carcinogenic hazard to humans of the consumption of red meat and processed meat. The Working Group assessed more than 800 epidemiological studies that investigated the association of cancer (more than 15 types) with consumption of red meat or processed meat, including large cohorts in many countries, from several continents, with diverse ethnicities and diets.

Book excerpt: This publication contains the proceedings of a seminar held in Abano Terme, Italy on November 13 - 17, 1978, under the auspices of the Commission of the European Communities, as part of the EEC programme of co-ordination of research on improvement of beef production. The programme was drawn up by a working group of specialists in beef production with the following composition: Dr. J. Thomas Belgium Denmark Prof. A. Neimann-S0rensen Dr. B. Vissac France Dr. J. R. Sreenan Ireland Prof. M. Bonsembiante Italy Dr. P. Susmel Italy Ir. H. De Boer The Netherlands Prof. J. C. Bowman UK Prof. W. F. Raymond UK Mr. I. L. Mason FAD Dr. J. C. Tayler Temporary appointment in CEC Dr. P. L'Hermite CEC The working group held one full meeting in Brussels in February 1978. The rest of the planning for the meeting was done by small group meetings and by correspondence. There were several interesting features to the seminar which contributed to its success. First, it was interdisciplinary and enabled new contacts to be developed between those concerned with beef technology and those concerned with land use. Second. different types of activity - plenary lectures. small group discussions. poster displays. technical visits and preparation of written conclusions agreed by the meeting - were included in the programme. Third, specific recommendations for future research priorities were established during the seminar.
