Or la perte des dents est la cause principale de la diminution de la capacité masticatoire, qui mène systématiquement à des restrictions alimentaires. Ces dernières sont responsables de carences nutritionnelles, de troubles de la digestion et de nombreuses perturbations au niveau de la santé globale de l'individu. A terme, une mauvaise nutrition entraîne un état chronique de malnutrition, favorise l'installation de pathologies multiples et augmente la mortalité. La première partie de cette étude décrit les caractéristiques de la nutrition chez les personnes âgées : leurs besoins nutritionnels spécifiques, les causes de la malnutrition et ses conséquences sur l'état de santé général. La seconde partie expose l'état dentaire et l'efficacité masticatoire des personnes âgées. La troisième partie analyse les conséquences de la perte des dents sur l'état nutritionnel des sujets âgés, et leur adaptation par la sélection de certains types d'aliments et par des modes de cuisson particuliers. Dans la dernière partie, les effets des traitements prothétiques (conventionnel et implantaire) sur l'équilibre nutritionnel sont analysés. Pour finir, le rôle du chirurgien-dentiste est détaillé : il lui incombe de dépister une malnutrition, de rétablir l'efficacité masticatoire de son patient et de lui prodiguer des conseils nutritionnels adaptés.
