On peut l'analyser à partir des festivités de toutes sortes qui se déroulaient à des occasions spéciales, c'est-à-dire regardons par exemple de plus près les mariages, baptêmes, funérailles et les repas des corporations et des métiers. Cette étude se consacre à l'analyse de sources qui viennent d'une région géographique assez restreinte qui comprend les villes de Brunswick, Duderstadt, Göttingen, Hanovre, Hildesheim et Lüneburg. Quant aux sources il faut avouer qu'elles ne sont pas très abondantes. Quand un chroniqueur parle par exemple d'un mariage célébré à la cour des ducs de Brunswick, il évoque surtout l'effet politique de cette union et parle longuement des invités célèbres sans montrer un intérêt plus concret pour le banquet de mariage et les plats servis. Il faut donc chercher ailleurs pour trouver des sources qui donnent des renseignements plus précis concernant notre sujet. Heureusement nous disposons de diverses ordonnances urbaines ainsi que des statuts de corporations qui nous renseignent en détail sur les règlements concernant les banquets. De plus, il y a le plus ancien livre de cuisine en bas allemand qui date du xve siècle et le journal d'un maire de la ville de Hildesheim qui relate ses expériences personnelles.
