Frutos só têm boa qualidade para consumo, quando estão maduros. A coloração externa dos frutos é, certamente, um dos fatores mais importantes, não apenas para atrair o consumidor, mas também para ajudá-lo a avaliar se o fruto atingiu o grau de maturação adequado. No caso do abacaxi, a coloração amarela da casca é geralmente associada ao fruto maduro, sendo o fruto verde considerado imaturo, ainda sem qualidade adequada para o consumo. No entanto, este conceito é equivocado, sobretudo para frutos da cultivar Pérola, a mais plantada e consumida no Brasil. Estes, mesmo apresentando a casca ainda completamente verde, podem estar maduros, isto é, com a qualidade interna adequada para consumo.
