Book excerpt: Northwest Florida is a rural area with a wide variety of local foods. The Florida Gulf coast has wonderful seafood brought in daily by the fishing fleet. It also has many lakes and rivers to provide freshwater fish, and local farms and ranches providing fresh vegetables, beef and pork. The cuisine of the area is naturally focused on the use of the fresh foods available locally. Wild game also provides a significant portion of many diets. Lucy Ward was born in Northwest Florida and lived there all her life. According to her, when she married as a senior in high school, she "couldn't boil water". She grew to be locally renowned for her mastery of the dishes popular in the area. When she died in 2017, her family gathered her recipes, reconstructed ones not written down, added a few that fit in with the theme, and compiled this book.

Book excerpt: Globe and Mail columnist Lucy Waverman invites us into her kitchen to learn the secrets to being a great cook. Lucy Waverman is one of the best-known food writers in the country. Her popular, long-running column in the Saturday Globe and Mail and her contributions to Food & Drink magazine have gained her a huge, faithful audience who rely on her recipes because they are foolproof. Lucy spent many years running a highly successful cooking school, giving her an innate understanding of people’s needs in the kitchen. Based on the questions her Globe readers ask, she started to realize that there was an entire generation (or two) of food-savvy people out there who hadn’t learned to cook the same way their mothers had. For whatever reason, some of us have missed out on learning the basics of great cooking – details that can turn a meal into something memorable. We’re not talking about the secret to an impressive soufflé or lobster bisque – save that for later. But everyone should know how to fold in an egg white, stir a risotto, and roast the perfect chicken, and Lucy’s Kitchen will show you how. Accented by renowned food photographer Rob Fiocca’s beautiful full-colour imagery throughout, this is the book we’ve all been waiting for. In the casual yet elegant style she’s known for, Lucy applies her incredible teaching skills to showing us how easy it is to create fantastic meals, whether they be for a simple evening for two or a night of entertaining a crowd. Seamlessly woven into the more than 250 impossible-to-resist recipes are the tips, techniques and information on ingredients you need to feel confident whipping up such wonders as Smoked Salmon Nori Roll, Lemon-Scented Roasted Lamb, Smashed Red Potatoes with Garlic Chips or a Chocolate Mousse with Saffron Foam. In Lucy’s Kitchen you will blossom into the fabulous cook you always knew you could be.

Available in PDF, EPUB and Kindle. Book excerpt: A Book of English Food is an elegant compendium of brilliant recipes adapted from the cookery books of the 1920s and 1930s by Arabella Boxer, with beautiful new illustrations by Cressida Bell. Arabella Boxer's Book of English Food describes the delicious dishes - and the social conditions in which they were prepared, cooked and eaten - in the short span between the two World Wars when English cooking suddenly blossomed. The food in these wonderful recipes comes from the great country houses, where little had changed since Victorian times, the large houses in London and the South, where fashionable hostesses vied with each other to entertain the most distinguished guests at their tables, and less grand establishments, like those in Bloomsbury where the painters and writers of the day contrived to lead cultured and civilised lives on little money. Containing 200 recipes, drawn from cookery books, magazines of the period, family sources or from talking to survivors who still remember those days, A Book of English Food is a fascinating glimpse into another world, and a celebration of English cooking at its finest. 'That rare thing, a cookery book with an argument: viz, that English cookery was once both good and independent of the cuisines of her neighbours . . . a rollicking good read' Observer 'I still find the calm elegance of her writing an inspiration' Nigel Slater 'A treasury of social gossip . . . immensely enjoyable and useful' Spectator 'A captivating exploration and celebration of the flowering of English cooking in the 1920s and 30s' Financial Times 'I recommend it, not only for its excellent food but also for the superb introductions and details of social history in the great houses with their shimmering hostesses' Evening Standard Arabella Boxer was born in 1934 and educated in the UK, Paris and Rome. She has written for the Sunday Times magazine and the Telegraph magazine and was Food Writer for Vogue from 1966 to 1968 and 1975 to 1991. She was awarded the Glenfiddich Cookery Writer of the Year Award in 1975 and 1978, a Glenfiddich Special Award in 1992 and won the 1991 André Simon Award and the 1992 Michael Smith Macallan Award for fine writing about British food. Arabella Boxer is the author of a number of cookery books, including First Slice Your Cookbook, Arabella Boxer's Garden Cookbook, Mediterranean Cookbook, The Sunday Times Complete Cookbook and A Visual Feast (with Tessa Traeger). A founding member of the Guild of Food Writers, she lives in London.

Book excerpt: A fascinating culinary odyssey through the kitchens of America's flourishing country communes, here is an original and vastly entertaining cookbook-plus-"an organic cookbook with lapses''that combines more than 150 superb and distinctly different recipes with a wealth of communal lore encompassing cameo sketches of hip cooks from Vermont to California and informal, informative raps on everything from growing and preserving your own vegetables to hosting a communal feast.Gathered from forty-three communes in twelve states and Canada and exotically named for their exuberant young inventors or the spirit in which they were created (Total Loss Spinach Blintzes, T.A.'s Potato Volcano, Omelet Outrageous), the recipes range from variations on familiar American staples like pizza and cheeseburgers and traditional ethnic concoctions to wholly unique creations that reflect the astonishing variety of tastes and dietary theories that Lucy Horton discovered on her year-long quest through the often primitive but always prodigiously productive kitchens of country communes. She discovered, too, that group cooking (not group sex) is the central fact and preoccupation of communal life. A vital and formative part of Consciousness III is Food Consciousness, and it is from the awakening palates and enthusiastic experiments with organic foods -wholesome natural grains, a cornucopia of lovingly tended fruits and vegetables, exotic herbs and aromatic spices-of young people cooking on wood-burning stoves that Lucy has gleaned a treasury of recipes as innovative as they are delicious.Note: This is a 2019 reprint of the original 1972 edition with an updated Afterword by both the author and illustrator.

Available in PDF, EPUB and Kindle. Book excerpt: NEW YORK TIMES BESTSELLER Three signs you need this book: 1) Chicken fingers qualify as adventurous. (Hey, they’re not nuggets.) 2) You live in fear of the white stuff touching the green stuff. 3) Family dinner? What’s family dinner? When Jenny Rosenstrach’s kids were little, her dinner rotation looked like this: Pasta, Pizza, Pasta, Burgers, Pasta. It made her crazy—not only because of the mind-numbing repetition, but because she loved to cook and missed her prekid, ketchup-free dinners. Her solution? A family adventure: She and her husband, Andy, would cook thirty new dishes in a single month—and her kids would try them all. Was it nuts for two working parents to take on this challenge? Yes. But did it transform family dinner from stressful grind to happy ritual? Completely. Here, Rosenstrach—creator of the beloved blog and book Dinner: A Love Story—shares her story, offering weekly meal plans, tons of organizing tips, and eighty-plus super-simple, kid-vetted recipes. Stuck in a rut? Ready to reboot dinner? Whether you’ve never turned on a stove or you’re just starved for inspiration, this book is your secret weapon. Praise for Dinner: The Playbook “Your hard-to-please crew will wolf down these inventive ways to introduce ‘fancy’ foods. Jenny Rosenstrach created them for her family, and she swears you’ll be shocked by the clean plates. . . . Dinner: The Playbook mixes ‘You can do this’ inspiration, practical planning, and easy recipes [with] hard-earned wisdom for getting a kid-pleasing meal on the table, night after night.”—Redbook “The master of simple, low-stress cooking. You might know her from her blog, Dinner, A Love Story; her new book, Dinner: The Playbook, is full of the same secret strategies for busy women.”—Glamour “Families and novice cooks who accept Rosenstrach’s challenge will definitely find a few ‘keepers’ here.”—Library Journal “Jenny Rosenstrach has truly mastered the art of the happy family dinner. This is the most sensible advice on cooking for kids I’ve ever seen: no gimmicks, no tricks, just practical advice for working parents. I wish this book had been around when my son was small.”—Ruth Reichl “This book is for anyone who loves the promise of a home-cooked dinner but gets bogged down by the day-to-day reality of it: picky kids, picky spouses, the extinction of the nine-to-five workday, and the pressure—oh, the pressure—to get it on the table before everyone collapses into a hangry (hungry + angry) meltdown. Which is to say that this book is for me, me, me. And I bet it’s for you too.”—Deb Perelman, author of The Smitten Kitchen Cookbook “Well, Jenny Rosenstrach, on the behalf of my whole family, thanks for the most practical—and yet still inspired—cookbook on our shelf. You are singularly responsible for my return to the kitchen.”—Kelly Corrigan, author of Glitter and Glue “Jenny Rosenstrach is warm, wise and a genius when it comes to dinners.”—Joanna Goddard, blogger, A Cup of Jo

Book excerpt: A TIMES BEST BOOK OF 2022 SO FAR Shortlisted for the Pushkin House Book Prize 2022 ‘Sparkling history…with a fairytale atmosphere of sleigh rides, royal palaces and heroic risk-taking’ The Times A killer virus…an all-powerful Empress…an encounter cloaked in secrecy…the astonishing true story. Within living memory, smallpox was a dreaded disease. Over human history it has killed untold millions. Back in the eighteenth century, as epidemics swept Europe, the first rumours emerged of an effective treatment: a mysterious method called inoculation. But a key problem remained: convincing people to accept the preventative remedy, the forerunner of vaccination. Arguments raged over risks and benefits, and public resistance ran high. As smallpox ravaged her empire and threatened her court, Catherine the Great took the momentous decision to summon the Quaker physician Thomas Dimsdale to St Petersburg to carry out a secret mission that would transform both their lives. Lucy Ward expertly unveils the extraordinary story of Enlightenment ideals, female leadership and the fight to promote science over superstition. ‘A rich and wonderfully urgent work of history’ Tristram Hunt
