LORENTE and published by . This book was released on 2000 with total page 178 pages. Available in PDF, EPUB and Kindle. Book excerpt: LA LOCALISATION DU PROTON DANS LA LIAISON HYDROGENE EST UN SUJET D'ETUDE TRES REPANDU DANS LES DOMAINES TEL QUE LA BIOCHIMIE OU LA CATALYSE. LA SENSIBILITE ET DE LA PRECISION DANS LES VARIATIONS DE L'ENVIRONNEMENT DU NOYAU ETUDIE FAIT DE LA SPECTROSCOPIE RMN UNE TECHNIQUE ADEQUATE POUR APPREHENDER LA LIAISON HYDROGENE. DANS NOTRE ETUDE, NOUS NOUS SOMMES ATTACHES A ANALYSER LE COMPORTEMENT DES ATOMES PARTICIPANT A LA LIAISON HYDROGENE PAR LA SPECTROSCOPIE RMN A L'ETAT SOLIDE. NOUS AVONS ETUDIE LES ATOMES D'AZOTES ET D'HYDROGENES DANS UNE SERIE DE COMPLEXES ACIDES/BASES EQUIMOLAIRES. LA 2, 4, 6-TRIMETHYL-PYRIDINE OU COLLIDINE MARQUEE ISOTOPIQUEMENT 1 5N EST PRISE COMME BASE DE REFERENCE. SUIVANT LA FORCE DE L'ACIDITE DES ACIDES, NOUS AVONS PU SYNTHETISER DIFFERENTS TYPES DE COMPLEXES ET OBTENIR TROIS STRUCTURES CRISTALLOGRAPHIQUES (COLLIDINE/ACIDE BENZOIQUE, COLLIDINE/ACIDE 3,5-DINITRO-BENZOIQUE ET COLLIDINE/ACIDE 2-NITRO-BENZOIQUE). L'UTILISATION DE LA TECHNIQUE DE LA RMN A L'ETAT SOLIDE DE POUDRES MICRO-CRISTALLINES DES COMPLEXES NOUS PERMET DE LOCALISER LE PROTON DE LA LIAISON HYDROGENE. L'OBTENTION DE LA CONSTANTE DE COUPLAGE DIPOLAIRE ENTRE L'ATOME D'AZOTE ET DE DEUTERIUM NOUS PERMET D'ACCEDER A LA DISTANCE ENTRE CES DEUX ATOMES ET DE METTRE EN PLACE UNE COURBE DE CORRELATION ENTRE LE DEPLACEMENT CHIMIQUE DE L'AZOTE ET LA DISTANCE ND. CETTE COURBE NOUS SERT D'OUTIL POUR DETERMINER LES DISTANCES DES LIAISONS HYDROGENES DES DIFFERENTS SITES A LA SURFACE DE SILICATES OU D'ALUMINES APRES ADSORPTION DE LA COLLIDINE. A L'ETAT LIQUIDE, NOUS EFFECTUONS L'ETUDE DE L'HYDROGENE ET DE L'AZOTE DE LA LIAISON HYDROGENE PAR RMN EN UTILISATION COMME SOLVANT LE FREON (CDF 3/CDCIF 2 1:2) A BASSE TEMPERATURE (120K). LE DEVELOPPEMENT DU MODELE DE L'ORDRE DE VALENCE, NOUS PERMET DE DECRIRE LA GEOMETRIE DE LA LIAISON HYDROGENE DANS LES COMPLEXES PAR LA RMN : ELLE EST DIRECTEMENT LIE AUX DEPLACEMENTS CHIMIQUES DE N ET H AINSI QU'A LEURS EFFETS ISOTOPIQUES EN SUBSTITUANT H PAR D DANS LA LIAISON.

Available in PDF, EPUB and Kindle. Book excerpt: Modern Methods of Plant Analysis When the handbook Modern Methods of Plant Analysis was first introduced in 1954 the considerations were: 1. the dependence of scientific progress in biology on the improvement of existing and the introduction of new methods; 2. the difficulty in finding many new analytical methods in specialized journals which are normally not accessible to experimental plant biologists; 3. the fact that in the methods sections of papers the description of methods is frequently so compact, or even sometimes so incomplete that it is difficult to reproduce experiments. These considerations still stand today. The series was highly successful, seven volumes appearing between 1956 and 1964. Since there is still today a demand for the old series, the publisher has decided to resume publication of Modern Methods of Plant Analysis. It is hoped that the New Series will be just as acceptable to those working in plant sciences and related fields as the early volumes undoubtedly were. It is difficult to single out the major reasons for success of any publication, but we believe that the methods published in the first series were up-to-date at the time and presented in a way that made description, as applied to plant material, complete in itself with little need to consult other publications. Contributing authors have attempted to follow these guidelines in this New Series of volumes.

Book excerpt: Here is an informative guide for the winemaker and connoisseur seeking a better and more basic understanding of what the science associated with winemaking is about! Written by one of the country's leading enologists, Winemaking Basics explains in easily understandable language the fundamental processes of making table wines. The author discusses the conditions, equipment, and basic materials used to make table wine. Handy as a step-by-step guide or a general reference, this practical book explores the crucial aspects of : an introduction to growing and harvesting grapes processing grapes fermentation and wine composition clarification and fining of wines stabilization aging, bottling, and storage additives and contaminants required methods of analysis sensory evaluation setting up and maintaining home winery facilities and equipment Winemaking Basics offers various options on making table wines. It also gives the winemaker some insight into why certain treatments have desired--or undesired--effects. Winemakers will learn techniques to change the style of their wine, avoid pitfalls, and correct or prevent expensive and frustrating problems. The bibliography covers most of the current texts that should be of interest to the winemaker. Although not heavily referenced, this informative guide mentions a few key books and articles for the reader who wishes to pursue the science aspects more deeply.

Available in PDF, EPUB and Kindle. Book excerpt: Analysis of Foods and Beverages Headspace Techniques covers the proceedings of a symposium on the analysis of foods and beverages by headspace techniques. The symposium is organized by the Flavor Subdivision of the Agricultural and Food Chemistry Division of American Chemical Society at its 174th National Meeting held on August 29-September 2, 1977 in Chicago, Illinois. It highlights methods of headspace concentration and headspace sampling that are producing results on a variety of products and model systems. Composed of 14 chapters, this book discusses a productive combination of techniques leading to the enrichment of headspace vapor components with gas chromatographic resolution followed by mass spectrometric identification. Core chapters address the analysis by headspace techniques of mouth odors, vegetable flavors, lipoxygenase catalyzed reactions, the vanilla bean, coffee, tea, cocoa, beer, wine, and sake. Finally, the book examines the use and abuse of headspace sampling, statistical treatments of GLC headspace data, as well as quantitative aspects, new instrumentation, and techniques. Flavor chemists and researchers will find this book invaluable.
