Book excerpt: Dans un contexte de croissance démographique, les bovins viande sont jugés en compétition avec l'alimentation humaine. Ils sont pourtant capables de convertir des fourrages et coproduits non consommables par l'Homme en nutriments comestibles. L'objectif de cette étude a été d'évaluer la contribution nette de systèmes bovins viande français à l'alimentation humaine en ne prenant en compte que les nutriments réellement consommables par l'Homme (indicateurs ECPC pour les protéines et ECEC pour l'énergie). Les systèmes sont soit producteurs nets de nutriments comestibles pour l'Homme soit consommateur net, en compétition alimentaire avec l'Homme. Cette étude s'est basée sur 144 élevages bovins viande, issus de 3 bassins (Massif Central, Pays de Loire, Grand Est) et répartis en 8 systèmes. Les 4 systèmes naisseurs herbagers sont des producteurs nets de protéines. Ce constat est à nuancer car ils produisent peu de bovins directement pour la consommation humaine. Les naisseurs-engraisseurs du Massif Central et des Pays de Loire, gros consommateurs de concentrés, sont en compétition protéique avec l'Homme. Au contraire, les engraisseurs et naisseurs-engraisseurs du Grand Est, consommateurs de pulpes et drèches, sont producteurs nets de protéines. L'intensification de la production explique les variations d'ECPC dans certains systèmes : les élevages qui apportent le plus de protéines à l'alimentation humaine sont extensifs, herbagers et économes en concentrés. Cette étude pourrait amener à de nouveaux travaux, afin de mieux évaluer la contribution alimentaire des systèmes naisseurs.
