Excerpt: ...daintier way is to fry them in crumbs. Either the small California or the large oysters may be prepared this way. The large eastern oysters are best prepared by heating them to boiling in their own juice, just enough to stiffen. Drain until quite dry, then dust in flour and roll in beaten egg with which a little cream is added to thin it, then in sifted bread crumbs. Fry in butter till an even brown. Salt and pepper and serve with lemon. California oysters are fried the same, omitting the parboiling. BASS PIERRE LE GRAND Have ready one peeled, fresh tomato, small half stick of boiled celery, one boiled beet and two sour pickles, this being for one fillet. Cut the pickles, beets and celery in strips like matches. Smother all of the above in butter for ten minutes. Then add a cup of fish sauce or veloute, seasoning it with plenty of bouquet. Cook the fillet in butter, adding white wine sauce. Arrange on a platter, with the above ingredients over the fish, neatly arranged on the fish. On the side of the platter arrange timbales of rice flavored with a little Spanish saffron. WHITE BAIT REMOULADE Put the white bait in cold milk, then in flour, and fry in very hot lard, having plenty of it, so the fish will swim--in other words, fry the same as doughnuts. When brown, remove with a wire spoon on a hot platter. Salt. Serve Boston brown bread buttered sandwiches, parsley and quartered lemons. Remoulade sauce served seperately on the side. The white bait takes three to four minutes to fry. BAKED SHAD WITH RAISINS Split the fish and put on a buttered baking dish the length of the fish. Slice one tomato on top of the fish, or more, if necessary, to cover it. Put bits of butter on the tomato, using for a medium sized fish, butter the size of an egg....
