Book excerpt: The first edition of Food processing technology was quickly adopted as the standard text by many food science and technology courses. This completely revised and updated third edition consolidates the position of this textbook as the best single-volume introduction to food manufacturing technologies available. This edition has been updated and extended to include the many developments that have taken place since the second edition was published. In particular, advances in microprocessor control of equipment, 'minimal' processing technologies, functional foods, developments in 'active' or 'intelligent' packaging, and storage and distribution logistics are described. Technologies that relate to cost savings, environmental improvement or enhanced product quality are highlighted. Additionally, sections in each chapter on the impact of processing on food-borne micro-organisms are included for the first time. - Introduces a range of processing techniques that are used in food manufacturing - Explains the key principles of each process, including the equipment used and the effects of processing on micro-organisms that contaminate foods - Describes post-processing operations, including packaging and distribution logistics

Available in PDF, EPUB and Kindle. Book excerpt: International Conference on Fish Migration and Bypass Channels held in Vienna in September 1996. It covers the range of fish pass technologies currently in use throughout the world and attempts to develop a wider, more ecological perspective on this formerly engineering-orientated discipline. Emphasis is placed on enhancing an understanding of fish migration behaviour, and achieving optimum design to meet the behavioural requirements of all known migratory species. Additional attention is paid to comparing the European trend towards constructing nature-like bypass channels with the highly technical solutions dominant in North America.

Book excerpt: Odeh (Conte Anadromous Fish Research Center) presents 13 contributions which explore the technical possibilities of constructing effective fish bypass systems for hydroelectric dams, especially those that are due for relicensing in the context of new regulations. The articles consist of case studies in the effectiveness of such techniques as surface bypass systems, modular inclined screens, hydroacoustic evaluation of fish entrainment patterns, surface collection, surface spill gates, and radio-tagging and radar tracking behavior evaluation strategies. Available in PDF, EPUB and Kindle. Book excerpt: This new edition of the best-selling book describes the main types of fishways and fish facilities used around the world to assist the passage of fish over dams and other obstructions to their migration. It also focuses on the protection of fish (mainly young fish) from the hazards encountered in their downstream migrations. The book brings together the type of knowledge and research needed to decide on the facility used as well as its design and operation. It emphasizes the need for both biologists and engineers to collaborate in the design and indicates in what fields such collaboration would benefit fisheries conservation in the future. This is the Second Edition of the only book to bring together all of these topics worldwide under one cover.

Book excerpt: This volume presents a synthesis of basic biological and conservation data for more than 30 species of sturgeons (Acipenseridae), paddlefishes (Polyodontidae) and their fossil allies in the order Acipenseriformes. Since the Jurassic, the four families of sturgeon-like fish have been restricted to the Holarctic, where until very recently they flourished in most major river systems. Today, however, virtually all species of sturgeons and paddlefishes face difficult conservation issues. Papers in the first section of this volume examine paleontology, systematics, evolution and basic biology of Acipenseriformes. The second section of this volume details current conservation status for most of the world's living species of Acipenseriformes. These papers mark the first attempt to make such a global review of recent data from across the northern hemisphere. The emerging picture is discouraging, for negative anthropogenic impacts range from overfishing to water pollution, to dams and water diversion projects, and all species are threatened to some degree. The third section of the volume considers specific human impacts and responses to conservation issues. These include: the Aral Sea ecological disaster and its impact on native sturgeons; a review of methods for restoring sturgeon populations; the use of molecular techniques in developing conservation strategies; the extreme sensitivity of sturgeons and paddlefishes to overfishing; and the history of a recently convicted caviar poaching ring. The volume's summary reviews the status of all extant species and notes future directions for research on behavior, ecology and population biology that could lead to better co-ordinated international conservation efforts.

This book was released on 2012-02-02 with total page 415 pages. Available in PDF, EPUB and Kindle. Book excerpt: One of the most controversial issues of the water sector in recent years has been the impacts of large dams. Proponents have claimed that such structures are essential to meet the increasing water demands of the world and that their overall societal benefits far outweight the costs. In contrast, the opponents claim that social and environmental costs of large dams far exceed their benefits, and that the era of construction of large dams is over. A major reason as to why there is no consensus on the overall benefits of large dams is because objective, authoritative and comprehensive evaluations of their impacts, especially ten or more years after their construction, are conspicuous by their absence. This book debates impartially, comprehensively and objectively, the positive and negative impacts of large dams based on facts, figures and authoritative analyses. These in-depth case studies are expected to promote a healthy and balanced debate on the needs, impacts and relevance of large dams, with case studies from Africa, Asia, Australia, Europe and Latin America.
