Book excerpt: Contains information on post-harvest handling and marketing operations and storage of fresh and processed products. Highlights technology which, when combined, has a positive and synergistic effect in preventing biochemical and physicochemical reactions and microbial growth - the main causes of quality losses in fruits and vegetables. Suggested methodologies combine technologies such as mild heat treatment, water activity reduction, lowering of the pH and use of anti-microbial substances to realize the potential of minimally processed, high-moisture fruit products. These relatively new technologies have been successfully applied to several important tropical and non-tropical fruits in different countries of Latin America.

This book was released on 2014-06-12 with total page 192 pages. Available in PDF, EPUB and Kindle. Book excerpt: In theory, about 95% of one animal is usable. The remaining 5% is processing losses. From that 95%, about 55% (on average) of the animal is used for edible products and the remaining 45% is inedible by-products. The world production of ABPs derived from the meat and animal production industries is approximately 60 million tons per year. It has been estimated that more than 10 million tons of products not destined for direct human consumption, derived from healthy animals, are produced in the EU every year.A lot of ABPs are commonly used in important productive sectors, such as in the pharmaceutical, feed, wool and leather industries but, notwithstanding, new technologies have widened the possible use of ABPs and derived products. Consequently a wide range of ABPs are not utilized and are destined to disposal. Further studies are required to hone accuracy and to find and define the appropriate application for the countless substances present in the animal reproductive organs.

This book was released on 2004 with total page 180 pages. Available in PDF, EPUB and Kindle. Book excerpt: The fruit and vegetable production sector of Latin America and the Caribbean, Asia and Eastern Europe is facing a new situation where, on the one hand, supermarket chains account for an increasing percentage of the domestic food retail market and, on the other hand, producers must compete in an increasingly demanding global market for non traditional and off-season fruits and vegetables. Small farmers are increasingly being marginalized and will be facing unequal market conditions unless they are able to change their practices to meet the needs of a modern food marketing system. Regardless of the production system, the technological challenge is to increase returns through the rational use of available resources, reducing production costs and post-harvest losses, enhancing competitiveness and adding value to the final product.

Book excerpt: This bulletin reviews the production of meat substitutes, condiments and bread-like products in various regions of the world, through the fermentation of grain legumes, seeds and nuts. Such traditional fermentation technologies, which are rapidly being lost, improve the nutritional quality and palatability of these protein-rich foods, while reducing levels of their toxic constituents and fuel requirement for their preparation. It is hoped that this document will generate wider interest in, and contribute to, the development and improvement of small-scale food fermentations in the developing world.

Book excerpt: The agrifood transport sector in Latin America and the Caribbean is a key component of the food supply chain, making a significant contribution to gross domestic product in these countries. Well-developed, efficient food transport systems are crucial to the survival of thousands of people, and pivotal to the success or failure of key economic sectors such as agriculture and other major national and international commercial activities. This publication presents a detailed study of problems encountered, covering seventeen countries. The study focuses primarily on stumbling-blocks faced by small farmers, and suggests possible policy and programme interventions to improve the situation in the neediest areas, with repercussions for the population as a whole.
