Book excerpt: The farming of animals for meat and milk confronts a stark dilemma. While world demand from a growing and more affluent human population is increasing rapidly, there are strong counter-arguments that we should eat less meat and pay more attention to environmental protection, animal welfare and human health and well-being. The aim of this book is to identify and explain the causes and contributors to current problems in animal husbandry, especially those related to 'factory farming', and advance arguments that may contribute to its successful re-orientation. Husbandry is considered in its broadest sense, namely the productive and sustainable use of the land for the good of all (plants, humans and other animals). The first part of the book outlines principles and arguments necessary to engage with current problems: depletion of natural resources and destruction of environment, animal welfare, food and health, fair trade and sharing resources. These arguments are illustrated by examples and sufficient evidence to justify the argument without obscuring the message. The second part presents a series of constructive proposals for change and development in animal husbandry, both in the developed world and subsistence agriculture. These include more integrated crop and livestock farming systems, the ethics of animal welfare and environmental management, and the evolution of a new social contract whereby the rights of the people to a fair share of good, safe food and a green and pleasant land are matched by a shared responsibility to preserve these things.

Whether for environmental reasons, health benefits, or the astounding difference in taste, consumers want to know that their meat was raised well. With more than 200 recipes for pork, beef, lamb, poultry, and game, stunning photos of delicious dishes, and tips on raising sustainable meat and buying from local farmers, Good Meat is sure to become the classic cooking resource of the sustainable meat movement. Praise for Good Meat: "Good Meat: The Complete Guide to Sourcing and Cooking Sustainable Meat belongs on the shelf of every carnivore out there. If you eat meat and if you raise animals for meat or if you have ever considered eating meat or eggs, you need a copy of Deborah Krasner's work of art. The thoughtful essays, equipment and seasonings chapters alone are worth the price of admission, but the anatomy lessons, cutting instructions and more than 200 recipes make the book a rare bargain indeed." -Grit.com "Deborah Krasner is part of a revolution in food, in agriculture, in nutrition, that is taking place in our nation. Her book is a fine contribution to that revolution, teaching us how to eat more healthfully, how to buy from local farmers, how to cook what they raise." --Senator Bernie Sanders, from the foreword "The healing local food movement's success hinges on artisanal farming and domestic culinary arts. Everyone interested in local, earth-friendly food will love this book." --Joel Salatin, owner of Polyface Farm "Good Meat is a template for all future cookbooks: one that educates on the culinary differences between factory-farmed meats and animals raised on family farms, and the utilization of the entire animal in a sustainable manner." --Patrick Martins, founder of Slow Food USA, Heritage Foods USA "Good Meat is the cookbook for all who have made the choice to eschew factory-farmed meat for grass-fed and pasture-raised meat. This book provides the knowledge to make sustainably raised meat a reality at your table." --Bruce Aidells, author of The Complete Meat Cookbook "If you want to cook delicious meals from humanely raised meat, Good Meat is for you. Book excerpt: Brave Old World is Tom Hodgkinson's year-round guide to the ancient art of husbandry. In this indispensable addition to his much-loved guides for the free-spirited, Tom Hodgkinson takes us on a modern tour of the ancient arts of everyday living: philosophy, husbandry and merriment. Drawing on the wisdom of an eclectic range of thinkers and writers, and, as ever, on Tom's own honestly recounted and frequently imperfect attempts to travel the road to self-sufficiency, Brave Old World charts the progress of a year in pursuit of the pleasures of the past. From January to December, let Tom be your guide to a better, older way of life. 'A meditation on why life has been a dreadful mistake ever since the Reformation brought us paid jobs and the work ethic. Brave Old World is hugely inspiring even when it is most bonkers' Sarah Bakewell, New Statesman 'A delightful read. Share in the exuberant joys and comic misfortunes of an eccentric who has made up his mind about the existence he wants to lead, and has gone ahead and lived it' James Delingpole, Mail on Sunday Tom Hodgkinson is the founder and editor of The Idler and the author of How to be Idle, How to be Free, The Idle Parent and Brave Old World. In spring 2011 he founded The Idler Academy in London, a bookshop, coffeehouse and cultural centre which hosts literary events and offers courses in academic and practical subjects - from Latin to embroidery. Its motto is 'Liberty through Education'. Find out more at www.idler.co.uk.

Book excerpt: Swine flu. Bird flu. Unusual concentrations of cancer and other diseases. Massive fish kills from flesh-eating parasites. Recalls of meats, vegetables, and fruits because of deadly E-coli bacterial contamination. Recent public health crises raise urgent questions about how our animal-derived food is raised and brought to market. In Animal Factory, bestselling investigative journalist David Kirby exposes the powerful business and political interests behind large-scale factory farms, and tracks the far-reaching fallout that contaminates our air, land, water, and food. In this thoroughly researched book, Kirby follows three families and communities whose lives are utterly changed by immense neighboring animal farms. These farms (known as "Concentrated Animal Feeding Operations," or CAFOs), confine thousands of pigs, dairy cattle, and poultry in small spaces, often under horrifying conditions, and generate enormous volumes of fecal and biological waste as well as other toxins. Weaving science, politics, law, big business, and everyday life, Kirby accompanies these families in their struggles against animal factories. A North Carolina fisherman takes on pig farms upstream to preserve his river, his family's life, and his home. A mother in a small Illinois town pushes back against an outsized dairy farm and its devastating impact. And a Washington State grandmother becomes an unlikely activist when her home is invaded by foul odors and her water supply is compromised by runoff from leaking lagoons of cattle waste. Animal Factory is an important book about our American food system gone terribly wrong---and the people who are fighting to restore sustainable farming practices and save our limited natural resources.
