Available in PDF, EPUB and Kindle. Book excerpt: At the turn of the nineteenth century—when most food in America was bland and brown and few people appreciated the economic potential of then-exotic foods—David Fairchild convinced the U.S. Department of Agriculture to finance overseas explorations to find and bring back foreign cultivars. Fairchild traveled to remote corners of the globe, searching for fruits, vegetables, and grains that could find a new home in American fields and in the American diet. In Fruits of Eden, Amanda Harris vividly recounts the exploits of Fairchild and his small band of adventurers and botanists as they traversed distant lands—Algeria, Baghdad, Cape Town, Hong Kong, Java, and Zanzibar—to return with new and exciting flavors. Their expeditions led to a renaissance not only at the dinner table but also in horticulture, providing diversity of crops for farmers across the country. Not everyone was supportive, however. The scientific community was concerned with invasive species, and World War I fanned the flames of xenophobia in Washington. Adversaries who believed Fairchild’s discoveries would contaminate the purity of native crops eventually shut down his program, but his legacy lives on in today’s modern kitchen, where navel oranges, Meyer lemons, honeydew melons, soybeans, and durum wheat are now standard.

Available in PDF, EPUB and Kindle. Book excerpt: Global climate change is expected to produce increased carbon dioxide levels in the atmosphere, higher temperatures, aberrant precipitation patterns and a host of other climatic changes that would affect all life on this planet. This review article addresses the impact of climate change on fruit trees and the response of the trees to a changing environment. The response of fruit trees to increasing carbon dioxide levels, phenological changes occurring in the trees themselves due to increased temperature and the lower chilling hours especially in the temperate regions, ecophysiological adaptations of the trees to the changing climate, impact of aberrant precipitation, etc. are reviewed. There is very little data on the impact of rising CO2 levels on fruit tree performance or productivity including the temperate region. Based on a large number of observations on the phenology, there is reason to believe that the flowering and fruiting of most species have advanced by quite a few days, but with variations in different crops and on different continents. The chilling hours have also grown shorter in many regions, causing considerable reductions in yield for several species. In the tropics, there is very little work on fruit trees; however, the available data show that precipitation is a major factor regulating their phenology and yield. The ecophysiological adaptations vary from species to species, and there is a need to develop phenological models in order to estimate the impact of climate change on plant development in different regions of the world. More research is also called for to develop adaptation strategies to circumvent the negative impacts of climate change.

Some references to it have been positive, some negative. It appears to be important, and they'd like to know more about it. But they want a full, understandable explanation, not a simplistic one. What Is Reformed Theology? is an accessible introduction to beliefs that have been immensely influential in the evangelical church. In this insightful book, R. C. Sproul walks readers through the foundations of the Reformed doctrine and explains how the Reformed belief is centered on God, based on God's Word, and committed to faith in Jesus Christ. Sproul explains the five points of Reformed theology and makes plain the reality of God's amazing grace.

Book excerpt: An in-depth examination of the regulatory, entrepreneurial, and organizational factors contributing to the expansion and transformation of China’s supplemental education industry. Like many parents in the United States, parents in China, increasingly concerned with their children’s academic performance, are turning to for-profit tutoring businesses to help their children get ahead in school. China’s supplemental education industry is now the world’s largest and most vibrant for-profit education market, and we can see its influence on the US higher education system: more than 70% of Chinese students studying in American universities have taken test preparation classes for overseas standardized tests. The Fruits of Opportunism offers a much-needed thorough investigation into this industry. This book examines how opportunistic organizations thrived in an ambiguous policy environment and how they catalyzed organizational and institutional changes in this industry. A former insider in China’s Education Industry, sociologist Le Lin shows how and why this industry evolved to become a for-profit one dominated by private, formal, nationally operating, and globally financed corporations, despite restrictions the Chinese state placed on the industry. Looking closely at the opportunistic organizations that were founded by marginal entrepreneurs and quickly came to dominate the market, Lin finds that as their non-compliant practices spread across the industry, these opportunistic organizations pushed privatization and marketization from below. The case of China’s Education Industry laid out in The Fruits of Opportunism illustrates that while opportunism leaves destruction in its wake, it can also drive the formation and evolution of a market.

Book excerpt: Eat fruits and vegetables not because you're told you should, but because you want them in every sense of the word. Because they are beautiful. And satisfying. And you desire their freshness, flavor, and simplicity. That's why Ripe is arranged by color, not season. Author and food writer Cheryl Sternman Rule, who is also the voice behind the popular blog 5 Second Rule, and award-winning food photographer Paulette Phlipot, have teamed up to bring inspiration to hungry home cooks. Their goal is not to deliver another lecture on eating for the sake of nutrition or environmental stewardship (though they affirm that both are important), but to tempt others to "embrace the vegetable, behold the fruit" because these foods are versatile, gorgeous, and taste terrific. Starting with red and progressing towards a calmer white, Ripe is arranged by color to showcase the lush, natural beauty of the following fruits and vegetables: RED: beets, blood oranges, cherries, cranberries, grapefruit, pomegranate, radicchio, radish, raspberries, red apples, red bell peppers, rhubarb, strawberries, tomatoes, and watermelon ORANGE: apricot, butternut squash, carrots, clementines, kumquats, mangoes, nectarines, papaya, peaches, persimmon, pumpkin, and yams YELLOW: banana, corn, lemon, pineapple, pomelo, squash blossoms, and yellow onions GREEN: green apples, artichokes, asparagus, avocado, bok choy, broccoli, Brussels sprouts, celery, cucumber, edamame, fava beans, fennel, green beans, honeydew, kale, kiwi, leeks, lime, peas, spinach, swiss chard, watercress, and zucchini PURPLE and Blue: blackberries, blueberries, eggplant, figs, plums, purple cabbage, purple grapes, red leaf lettuce, and red onion WHITE: bosc pears, cauliflower, coconut, endive, garlic, jicama, mushrooms, parsnips, potatoes, and turnip Each fruit and vegetable is accompanied by a lighthearted essay, breathtaking photography, and one showcase recipe, along with three "quick-hit" recipe ideas. With 150 photos and 75 recipes, this unique cookbook will quicken your pulse and leave you very, very hungry. For more information, visit RipeCookbook.com

A scientific knowledge of the horticulture, biology, chemistry, and nutrition of fruits forms the foundation. A presentation of technological and engineering principles involved in processing fruits is a prelude to their commercial production. As examples, the manufacture of several categories of fruit products is discussed. The final part of the book discusses individual fruits, covering their harvest to a finished product in a retail market. As a professional reference book replete with the latest research or as a practical textbook filled with example after example of commodity applications, the Handbook of Fruits and Fruit Processing is the current, comprehensive, yet compact resource ideal for the fruit industry.

Book excerpt: Food processing is the transformation of raw ingredients into food, or of food into other forms. Food processing typically takes clean, harvested crops or butchered animal products and uses these to produce attractive, marketable and often long shelf-life food products. Benefits of food processing include toxin removal, preservation, easing marketing and distribution tasks, and increasing food consistency. In addition, it increases yearly availability of many foods, enables transportation of delicate perishable foods across long distances and makes many kinds of foods safe to eat by de-activating spoilage and pathogenic micro-organisms. Processed foods are usually less susceptible to early spoilage than fresh foods and are better suited for long distance transportation from the source to the consumer. The extremely varied modern diet is only truly possible on a wide scale because of food processing. Food Dehydration is a method of food preservation that works by removing water from the food, which inhibits the growth of microorganisms. The dehydration process has to check various parameters like heat-mass transfer, atmospheric pressure, equipments suitable for drying etc. to ensure suitable dehydration of food. Food processing techniques have to take measures on to maintain food safety and control risks and hazards associated with food processing. The book includes dehydration process of Onion, roasting of coffee beans, development process of Guava squash, preparation of fried potato chips, processing of rice, butter and margaraine, canning of chilies Plums, processing and preservation of jack fruit, characteristics of sweetened dahi, cereal grains, instant chutneys from pudina and gongura, starch isolated from potato tubers, coating of cashew kernel baby bits, ripening changes in mango fruits, mechanical and thermal properties of maize, storage of basmati rice under carbon dioxide-rich atmosphere, effect of different varieties of soya bean on quality of paneer, analysis of menthol content in pan masala samples, preparation of dehydrated potato cubes, quality evaluation of raw dried mango slices khatai and mango powder amchur, packaging and storage of biscuits containing finger millet flour, storage effect on microbial safety of potato flour, processing and quality evaluation of ready-to-eat watermelon nectars etc. The book is highly recommended to new entrepreneurs, existing units who wants to get more information of processing of fruits and vegetables. Book excerpt: "A comprehensive and entertaining historical and botanical review, providing an enjoyable and cognitive read.”—Nature The foods we eat have a deep and often surprising past. From almonds and apples to tea and rice, many foods that we consume today have histories that can be traced out of prehistoric Central Asia along the tracks of the Silk Road to kitchens in Europe, America, China, and elsewhere in East Asia. The exchange of goods, ideas, cultural practices, and genes along these ancient routes extends back five thousand years, and organized trade along the Silk Road dates to at least Han Dynasty China in the second century BC. Balancing a broad array of archaeological, botanical, and historical evidence, Fruit from the Sands presents the fascinating story of the origins and spread of agriculture across Inner Asia and into Europe and East Asia. Through the preserved remains of plants found in archaeological sites, Robert N. Spengler III identifies the regions where our most familiar crops were domesticated and follows their routes as people carried them around the world. With vivid examples, Fruit from the Sands explores how the foods we eat have shaped the course of human history and transformed cuisines all over the globe.

Book excerpt: Mary M. Cameron first encountered an Ayurvedic medical practice in remote, western Nepal in 1978. In Three Fruits, Cameron traces Ayurvedic medical practices from those village healers to the professionally trained doctors in the Kathmandu Valley. An intimate portrayal of Ayurvedic doctors in Nepal during a period of political unrest and social change, Three Fruits connects the doctors’ care for Nepal’s valued medicinal plants to the boundless joy of health they desire for their patients. Combining ethnography with history and Indian philosophy, this detailed study weaves the elegant theory of tridosa (three humors) and the popular medicine trifala (three fruits) into the narrative accounts of doctors’ multi-sited practice. Aware of rising global alternative medicine and environmental movements, the doctors speak to their relevance for Ayurveda and sustainable, integrated, and culturally meaningful plural medicine in Nepal. This book is recommended for scholars of anthropology, sociology, Asian studies, history, philosophy, ethnobotany, public health, and environmental studies.

Bioactives in Fruit: Health Benefits and Functional Foods aims to summarise some of our current knowledge on the bioactive compounds that are associated with the health benefits of specific fruits with a strong emphasis on the validation of health benefits by human intervention trials. Reflecting the current interest in food and health, the book includes strategies to retain and enhance the bioactives in fruit through breeding, growing conditions, fruit storage, processing into ingredients and production of functional foods. To accomplish this task authors with expertise in biology, chemistry, pharmacology, food science, nutrition, medicine, and horticulture have contributed. They come from universities, government and industry funded research institutes and biotechnology and food companies in Europe, the United States, Asia and New Zealand to give the book a broad perspective. This book, describing fruit bioactives, their health benefits when consumed as a food and related topics regarding their development into fresh or processed functional foods, will be of use to postgraduate students, researchers, functional food product developers, food regulators and anyone who has curiosity about why fruit is good for you. The information contained within will provide plant breeders with new targets for the development of value-added horticultural products, and will also provide nutritionists and dieticians with a useful resource for developing strategies to assist in preventing or slowing disease onset or severity. Bioactives in Fruit: Health Benefits and Functional Foods is a major resource which will be required reading for anyone working in the fields of health and functional foods.
