However, there is a gap between the degree of concern and the rate of choices for relatively more sustainable food products. Funded by the Nordic Council of Ministers, a representative consumer-citizen survey study across eight Nordic-Baltic countries about sustainability understanding in the food context was conducted in summer 2022 by the MAPP Centre at Aarhus University, Denmark, with the contribution of a steering committee consisting of representatives from each country.The report provides research insights, which allow decision makers to know where consumer-citizens are in their current understanding of food sustainability. This serves as an important input for discussing an efficient design of and communication about a future sustainability labelling framework empowering consumer-citizens to make informed food choices.

The project is funded by the Nordic Working Group for Diet, Food & Toxicology (NKMT) under the Nordic Council of Ministers. The purpose of this report is to provide an overall picture of the organic food and beverage market in the Nordic and Baltic countries. This includes a review of historical developments within the sales of organic foods and beverages across the main sales channels, imports/exports and organic agricultural production. Furthermore, we give an overview of political incentives in the area of organic food, consumer profiles and attitudes, and provide an outlook on the future trends and expected developments within the Nordic countries. The report also includes an outlook for the Nordic region and globally towards 2030. Lastly, the report includes a link between organic food and the UN’s 2030 sustainability agenda and how the individual countries incorporate organic into their national strategies towards 2030. This sixth edition of the NNR gives, for the first time ever, recommendations not only about what food is good for our health, but also what is good for the environment. In addition, dietary reference values for nutrients have been updated, many nutrients have received reference values for the first time, and many more food groups have been analysed than in previous editions – turning NNR2023 into the most comprehensive NNR to date. In short, the NNR2023 recommends: A predominantly plant-based diet high in vegetables, fruits, berries, pulses, potatoes and whole grains. Ample intake of fish and nuts. Moderate intake of low-fat dairy products. Limited intake of red meat and poultry. Minimal intake of processed meat, alcohol, and processed foods containing high amounts of fats, salt and sugar.

Book excerpt: The Nordic countries have collaborated in setting guidelines for dietary composition and recommended intakes of nutrients for several decades through the joint publication of the Nordic Nutrition Recommendations (NNR). This 5th edition, the NNR 2012, gives Dietary Reference Values (DRVs) for nutrients, and compared with earlier editions more emphasis has been put on evaluating the scientific evidence for the role of food and food patterns contributing to the prevention of the major diet-related chronic diseases. Recommendations on physical activity are included and interaction with physical activity has been taken into account for the individual nutrient recommendations wherever appropriate. A chapter on sustainable food consumption has been added. A Nordic perspective has been accounted for in setting the reference values.The NNR 2012 has used an evidence-based and transparent approach in assessing associations between nutrients and foods and certain health outcomes. Systematic reviews form the basis for the recommendations of several nutrients and topics, while a less stringent update has been done for others. The systematic reviews and individual chapters have been peer reviewed and the systematic reviews are published in the Food & Nutrition Research journal. The draft chapters were subject to an open public consultation. Recommendations have been changed only when sufficient scientific evidence has evolved since the 4th edition. The primary aim of the NNR 2012 is to present the scientific background of the recommendations and their application. A secondary aim is for the NNR 2012 to function as a basis for the national recommendations that are adopted by the individual

Book excerpt: Within agri- and aquaculture, a specific bioeconomy challenge – and a bioeconomy opportunity – has been identified concerning sustainable protein supply for livestock production and fish farming. Today, imported soy products are by far the most important protein source however several alternative ways of producing protein rich feed has been identified using regional resources. Production of legumes, pulses and grass can be expanded. Alternative protein rich sources include single cell protein (bacteria/fungi), macroalgae (seaweed), mussels and insects. Local protein production has a number of benefits in the form of generation of local jobs, reduction in the import of nutrients and in general boosting the bioeconomy. Many of the alternative ways of producing protein rich feed are still under development, this report therefor also includes recommendations concerning how to proceed.
