Book excerpt: The International Life Sciences Institute (ILSI), a nonprofit, public foundation, was established in 1978 to advance the sciences of nutrition, toxicology, and food safety. ILSI promotes the resolution of health and safety issues in these areas by sponsoring research, conferences, publications, and educational programs. Through ILSI's programs, scientists from government, academia, and industry unite their efforts to resolve issues of critical importance to the public. As part of its commitment to understanding and resolving health and safety issues, ILSI is pleased to sponsor this series of monographs that consolidates new scientific knowledge, defines research needs, and provides a background for the effective application of scientific advances in toxicology and food safety. Alex Malaspina President International Life Sciences Institute Preface We live in a changing world. The everyday, ongoing changes in people's habits and the availability of foods in the market lead to continuous changes in food con sumption patterns, changes we need to understand since they play an important role in nutrition as well as toxicology. In nutrition, food intake data provide us with the information needed to exam ine whether, on the one hand, these modifications are still within the limits of nutritional safety and, on the other, whether they offer the possibility of monitor ing the evolution of dietary habits. In toxicology, food intake data are used to calculate the potential intake of sub stances used as additives or substances that enter food as contaminants, such as pesticide residues, packaging materials, and radionuclides.

Book excerpt: The main objective of the Food control system assessment tool is to propose a harmonized, objective and consensual basis to analyse the performance of a national food control system. It is intended to be used by countries as a supporting basis for self-assessment to identify priority areas of improvement and plan sequential and coordinated activities to reach expected outcomes, and by repeating the assessment on a regular basis, countries can monitor their progresses. The Tool is based on Codex principles and Guidelines for National Food Control Systems as well as other relevant Codex guidance for food control systems, which are referenced throughout the document. Its scope is given by the dual objectives quoted in Codex guidance for these systems: protect health of consumers and ensure fair practices in the food trade. Dimension B is part of the Food control system assessment tool and focuses on the processes and the outputs of the control activities inherent to a national food control system. It reviews the control functions exercised by CAs over Food Business Operators (FBOs), be it at domestic, import or export level, to guarantee food safety and quality for national consumers along the food chain and fair trade practices. It also maps the control functions and mechanisms at the overall food supply level, necessary to identify, monitor, predict and handle food safety hazards and emerging risks and to deal with food emergencies. The main mechanisms that should be in place include data collection programmes on food products (also referred to as monitoring programmes), data collection programmes on food-borne diseases (also referred to as surveillance programmes), as well as programmes aiming at managing food safety emergencies.

Book excerpt: The protocol describes methods for how to monitor marketing of foods and beverages high in fat, salt and sugar towards children and young people at a given time as cross-sectional studies, as well as allowing for monitoring of trends. The data provided could also be used for evaluation purposes, for instance providing relevant data for evaluating regulation practices and schemes in the respective countries; to study advertising and marketing practices, contents and forms over time. In addition to being a tool for monitoring purposes within each country, the protocol will also enable comparisons between the Nordic countries by establishing a joint understanding on how each marketing channel should be monitored. The protocol has been developed as a Nordic project between representatives and experts from Iceland, Finland, Sweden, Denmark and Norway together with international experts.

Book excerpt: Monitoring of dietary intake at national and global levels is becoming increasingly important with the changing food systems and diets. Better measurement and monitoring are needed to support governments in establishing policies and programmes to promote healthy diets and assess the effectiveness of these actions. However, there is lack of consensus on the indicators that best capture the properties of healthy diets. Recognizing the need for consensus and action, the Food and Agriculture Organization of the United Nations (FAO), the United Nations Children’s Fund (UNICEF), and the World Health Organization (WHO), have joined forces to chart a way forward via Healthy Diets Monitoring Initiative (HDMI). This is the first version of the guidance for monitoring healthy diets globally, which provides an overview of healthy diets measurement purposes, types of surveys suitable for the monitoring purpose, appropriate dietary assessment methods, relevant dietary data types and potential healthy diet metrics for national and global monitoring purposes. The guidance will be enhanced in the coming years to reflect the most up to date technical and operational recommendations, after rounds of consultations with countries and experts actively engaged in the implementation of surveys and data collection processes.

Book excerpt: The bestselling author of the Wheat Belly books brings his next big, game-changing idea—how the human microbiome is evolving, and potentially wrecking, our health, and how we can fix it. Because of our highly processed diet, pesticides, and overuse of antibiotics, our guts are now missing so many of the good bacteria that we require to be healthy. As a result, many of us have lost control over our health, weight, mood, and even behavior. The ancient bacteria that keep our digestion moving have been dying, replaced by harmful microbes that don’t keep us physically and mentally fit. With cutting-edge research, Dr. Davis connects the dots between gut health and modern ailments. There are entire species of microbes that have disappeared, which creates health issues that were uncommon one hundred, or even fifty, years ago. The result is SIBO (small intestinal bacterial overgrowth), a silent and profound epidemic, which affects one out of three people and is responsible for an astounding range of human health conditions. Super Gut shows us how to eliminate bad bacteria and bring back the “good” bacteria with a four-week plan to reprogram your microbiome. This not only gets to the root of many diseases, but also improves levels of oxytocin (the bonding/happy hormone), brain health, anti-aging, weight loss, mental clarity, and restful sleep. Also included are more than forty recipes, a diet plan, and resources so you can pinpoint your gut issues, correct them, and maintain your long-term health and well-being.

Finally, it gives an overview of the assessment approach, from the ratings to the descriptive analysis supporting the allocation of scores. The volume also contains a glossary of useful terms and the list of Codex documents referenced in the Tool.
