Book excerpt: During the past decade, tremendous growth has occurred in the use of nutrition symbols and rating systems designed to summarize key nutritional aspects and characteristics of food products. These symbols and the systems that underlie them have become known as front-of-package (FOP) nutrition rating systems and symbols, even though the symbols themselves can be found anywhere on the front of a food package or on a retail shelf tag. Though not regulated and inconsistent in format, content, and criteria, FOP systems and symbols have the potential to provide useful guidance to consumers as well as maximize effectiveness. As a result, Congress directed the Centers for Disease Control and Prevention (CDC) to undertake a study with the Institute of Medicine (IOM) to examine and provide recommendations regarding FOP nutrition rating systems and symbols. The study was completed in two phases. Phase I focused primarily on the nutrition criteria underlying FOP systems. Phase II builds on the results of Phase I while focusing on aspects related to consumer understanding and behavior related to the development of a standardized FOP system. Front-of-Package Nutrition Rating Systems and Symbols focuses on Phase II of the study. The report addresses the potential benefits of a single, standardized front-label food guidance system regulated by the Food and Drug Administration, assesses which icons are most effective with consumer audiences, and considers the systems/icons that best promote health and how to maximize their use.

If you—like millions of other Americans—still don't know how to read food labels and are frustrated by the hundreds of nutrition and health claims as well as statements like free-range and grassfed, it's time to learn what you're really putting into your body...find out how to select the most healthy foods at the supermarket and still get dinner on the table by 6:00 pm with EATING BETWEEN THE LINES Shopping is no longer as simple as deciding what's for dinner. Food labels like "organic," "natural," "low carb," and "fat free!" scream out at you from every aisle at the supermarket. Some claims are certified by authoritative groups such as the FDA and USDA, but much of our country's nutrition information is simply a marketing ploy. If you want to know what food labels really mean—and what they could mean to your health—EATING BETWEEN THE LINES will explain why: --Chickens labeled "free range" may never actually see daylight --Organic seafood may be a misnomer. --The words "hormone-free" on pork, eggs and poultry is meaningless --"Low fat" cookies and "heart-healthy" cereals may contain heart damaging trans-fatty acids ...and more. Organized by supermarket section, from the vegetable aisle to the dairy case, EATING BETWEEN THE LINES also features more than seventy actual food labels and detachable shopping lists for your convenience—and to help bring the best food to the table for you and your family.

This book was released on 2000-12-15 with total page 502 pages. Available in PDF, EPUB and Kindle. Book excerpt: As the number of old persons increases dramatically, information is the one thing both the young who are trying to take care of the old and the elderly who are trying to take care of themselves need to assuage concerns and solve problems that advancing years bring. Like their young counterparts, the old know shockingly little about care and upkeep, not only of the automobile, but more important of the human body. Aging: An Encyclopedia concretely and accurately summarizes the latest research in geriatrics and gerontology while presenting strategies for adding years to your life and life to your years. Not just basic questions are answered, such as those involving the onset of cancer, but also seemingly peripheral ones, such as descriptions of government and non-profit agencies that can be reached for information and help. Included are practical aids, such as checklists for choosing a nursing home, a doctor, a financial planner. Theory and application are kept separate. Avoided are false hopes and sensationalism too often found in news coverage of aging. Only solutions to problems of aging which are medically sound and applicable to everyday life are dealt with. This volume does not pretend to state or to answer every question that at present can be raised concerning aging. There is no attempt at simple solutions to complex problems. The intention is that enough information be included to support and exemplify statements made. Although I am immensely indebted to the many researchers upon whose work I have leaned so heavily, there are few footnotes, acknowledgements and attributions in the text, for the attempt here is to bring out essentials clearly without scholarly encumbrances, such as raised numbers trailed by sets of dots. A guidebook, this volume is easy to use and small enough to be carried everywhere. The format is designed as a reference to be consulted for particular concerns. Essays are organized in more than 80 topics arranged alphabetically. Entries are self-contained, so that a reader can start anywhere. Where it is possible to retain accuracy, language familiar to lay people has been substituted for scientific jargon. Technical terms are explained in the glossary at the end of the volume. For more in-depth information, articles and books are cited in the bibliography and in particular areas although it is wise to remember that publishers and organizations are continually revising or bringing out new writings to reflect research with the most recent data and discoveries.

Available in PDF, EPUB and Kindle. Book excerpt: It’s been 111 years since the publication of The Jungle, Upton Sinclair’s groundbreaking book on the cattle industry. Though improvements in animal welfare have been made since then, the industry has evolved to include issues Sinclair could never have foreseen. In What’s the Matter with Meat, Katy Keiffer leads readers though a crash course on how this powerful multinational business has been able to generate such a bountiful supply of absurdly cheap animal proteins. What’s the Matter with Meat? explores everything from labor issues to genetic manipulation to animal welfare to environmental degradation, illustrating just how the industrial model for meat production conjures up huge quantities of cheap meat even as it shifts many of the real costs onto the taxpayer. She describes practices few of us know about, such as land grabs in which predator companies acquire property in foreign countries for meat production, often driving out local farmers. She shows how industry consolidation entrenches cost-effective but harmful practices, creating monopolies that force competitors out of business, drive down labor costs, erode workers’ rights, and exert extraordinary power over nearby communities. Keiffer demonstrates with irrefutable force that the current model for meat production—adopted worldwide—is simply not sustainable and will soon exhaust the planet’s resources. A hard-hitting critique of the meat industry and its harmful effects, this book shows us just how important it is to care about where our food comes from, to support alternative production systems, and to stop those practices that are ruining our planet in the service of the burger and the nugget.
