Book excerpt: "The late medieval world was marked by a culture of refinement and sophistication. The period's media of choice--paintings, manuscripts, prints, tapestries, embroideries, ivory sculpture, metalwork, and enamels--speak volumes about the pleasures of sensory engagement. This sumptuous new book brings together sacred and secular art to reveal the shared intellectual culture that governed perception in Europe in the 13th through the 16th centuries. The essays explore these themes through representations of religious practices, royal rituals, feasts and celebrations, music, and literature"--

Download or read book Food History written by Sylvie Vabre and published by Routledge. This book was released on 2021-05-17 with total page 223 pages. Available in PDF, EPUB and Kindle. Book excerpt: This pioneering book elevates the senses to a central role in the study of food history because the traditional focus upon food types, quantities, and nutritional values is incomplete without some recognition of smell, touch, sight, hearing, and taste. Eating is a sensual experience. Every day and at every meal the senses of smell, touch, sight, hearing, and taste are engaged in the acts of preparation and consumption. And yet these bodily acts are ephemeral; their imprint upon the source material of history is vestigial. Hitherto historians have shown little interest in the senses beyond taste, and this book fills that research gap. Four dimensions are treated: • Words, Symbols and Uses: Describing the Senses – an investigation of how specific vocabularies for food are developed. • Industrializing the Senses – an analysis of the fundamental change in the sensory qualities of foods under the pressure of industrialization and economic forces outside the control of the household and the artisan producer. • Nationhood and the Senses – an exploration of how the combination of the senses and food play into how nations saw themselves, and how food was a signature of how political ideologies played out in practical, everyday terms. • Food Senses and Globalization – an examination of links between food, the senses, and the idea of international significance. Putting all of the senses on the agenda of food history for the first time, this is the ideal volume for scholars of food history, food studies and food culture, as well as social and cultural historians. Putting all of the senses on the agenda of food history for the first time, this is the ideal volume for scholars of food history, food studies and food culture, as well as social and cultural historians.

Book Synopsis The Stranger at the Feast by : Tom Boylston
Download or read book The Stranger at the Feast written by Tom Boylston and published by Univ of California Press. This book was released on 2018-01-12 with total page 194 pages. Available in PDF, EPUB and Kindle. Book excerpt: At publication date, a free ebook version of this title will be available through Luminos, University of California Press’s Open Access publishing program. Visit www.luminosoa.org to learn more. The Stranger at the Feast is a pathbreaking ethnographic study of one of the world’s oldest and least-understood religious traditions. Based on long-term ethnographic research on the Zege peninsula in northern Ethiopia, the author tells the story of how people have understood large-scale religious change by following local transformations in hospitality, ritual prohibition, and feeding practices. Ethiopia has undergone radical upheaval in the transition from the imperial era of Haile Selassie to the modern secular state, but the secularization of the state has been met with the widespread revival of popular religious practice. For Orthodox Christians in Zege, everything that matters about religion comes back to how one eats and fasts with others. Boylston shows how practices of feeding and avoidance have remained central even as their meaning and purpose has dramatically changed: from a means of marking class distinctions within Orthodox society, to a marker of the difference between Orthodox Christians and other religions within the contemporary Ethiopian state.
Download or read book Crave written by Ludovic Lefebvre and published by William Morrow. This book was released on 2005-04-26 with total page 268 pages. Available in PDF, EPUB and Kindle. Book excerpt: For top chef Ludo Lefebvre, cooking is a sensual process that involves all five senses at every stage of preparation. In Crave, Lefebvre offers more than one hundred original, elegant, and unbelievably delicious recipes that teach us the joy -- and skill -- of cooking with the senses. In dishes such as his signature Glazed Langoustines with Ceylon Cinnamon, he shows that through our senses we can bring creativity and a sense of playfulness to cooking while still preserving the great traditions behind cuisine. Lefebvre brings a whole new level to the sense of taste with groundbreaking techniques for contrasting and balancing spices; he shows how to choose meat and produce and how to test food through touch; he teaches the difference between the sound of butter and oil that's ready for cooking and the sound of burning; he offers visual cues that can enhance technique and presentation; and he introduces recipes that tantalize the powerful sense of smell to heighten both the flavor and experience of a dish. Along with his desire to put delightful recipes into the hands of the home chef, Lefebvre wants us to expand our perception and understanding of the cooking process. "I want people to cook with love. I want them to be aware of what they're doing," says Lefebvre. "The act of cooking can be as much of a pleasure as eating, and if you really cook with your senses, you begin to find that cooking isn't work -- it's play." These inspiring recipes will encourage you to slow down and become fully absorbed as you learn to cook with and for all five senses: See: Oysters on the Half Shell with Red Beet Jelly and Shallot Cream Touch: Fried Stuffed Tomato Beignets Smell: Chicken Etouffée in Dried Verbena and Curry Leaves Hear: Roast Beef with Long Pepper and Spiced French Fries Taste: Lemon Sorbet with Saffron With Lefebvre's highly original interpretation of French cuisine and his sensual, almost spiritual, approach to every culinary endeavor, Crave invites us to make home cooking a rich, sensual, and rewarding experience.

Book Synopsis Making Sense of Taste by : Carolyn Korsmeyer
Download or read book Making Sense of Taste written by Carolyn Korsmeyer and published by Cornell University Press. This book was released on 2014-01-04 with total page 256 pages. Available in PDF, EPUB and Kindle. Book excerpt: Taste, perhaps the most intimate of the five senses, has traditionally been considered beneath the concern of philosophy, too bound to the body, too personal and idiosyncratic. Yet, in addition to providing physical pleasure, eating and drinking bear symbolic and aesthetic value in human experience, and they continually inspire writers and artists. Carolyn Korsmeyer explains how taste came to occupy so low a place in the hierarchy of senses and why it is deserving of greater philosophical respect and attention. Korsmeyer begins with the Greek thinkers who classified taste as an inferior, bodily sense; she then traces the parallels between notions of aesthetic and gustatory taste that were explored in the formation of modern aesthetic theories. She presents scientific views of how taste actually works and identifies multiple components of taste experiences. Turning to taste's objects—food and drink—she looks at the different meanings they convey in art and literature as well as in ordinary human life and proposes an approach to the aesthetic value of taste that recognizes the representational and expressive roles of food. Korsmeyer's consideration of art encompasses works that employ food in contexts sacred and profane, that seek to whet the appetite and to keep it at bay; her selection of literary vignettes ranges from narratives of macabre devouring to stories of communities forged by shared eating.
Book Synopsis A Feast of Words by : Michel Jeanneret
Download or read book A Feast of Words written by Michel Jeanneret and published by University of Chicago Press. This book was released on 1991-10-08 with total page 324 pages. Available in PDF, EPUB and Kindle. Book excerpt: The banquet gives rise to a special moment when thought and the senses—words and food—enhance each other. Throughout history, the ideal of the symposium has reconciled the angel and the beast in the human, renewing the interdependence between the mouth that speaks and the mouth that eats. Michel Jeanneret's lively book explores the paradigm of the banquet as a guide to significant tendencies in Renaissance Humanist culture and shows how this culture in turn illuminates the tensions between physical and mental pleasures. Ranging widely over French, Italian, German, and Latin texts, Jeanneret not only investigates the meal as a narrative artefact but enquires as well into aspects of sixteenth-century anthropology and aesthetics.
