One of the main properties is stability, which refers to the ability of an emulsion to resist physical changes over time. The development of an effective strategy to prevent undesirable changes in the properties of a particular food emulsion depends on the dominant physicochemical mechanism(s) responsible for the changes. In practice, two or more of these mechanisms may operate in concert. It is therefore important for food scientists to identify the relative importance of each mechanism, the relationship between them, and the factors that influence them, so that effective means of controlling the stability and physicochemical properties of emulsions can be established. Several techniques are used to study the physical behavior and structure of emulsions. Each technique has its advantages and disadvantages and provides different insights into the destabilization mechanisms. Among the oldest methods used to study emulsion stability is visual observation and small deformation rheometry. More recently, other techniques, such as ultrasound profiling, microscopy, droplet size distribution, and measurement of surface concentration to characterize adsorbed protein at the interface, have also been employed. Some of these techniques, such as droplet size distribution, involve some form of dilution. However, dilution disrupts some structures that play an important role in stability. The ability to study the stability of food emulsions in their undiluted form may reveal subtle nuances about their stability. Diffusing wave spectroscopy (DWS), laser scanning confocal microscopy (LSCM), nuclear magnetic resonance (NMR), and Turbiscan are among the more powerful, non-perturbing techniques used to characterized emulsions.

Book excerpt: The report gives further data on chemical composition, particle size and pH variation in intravenous fat emulsions in current and recent use. Some retests were made on old emulsions of the previous reports. All of the new emulsions that have been received were tested. New colorimetric procedures with ferrous thiocyanate reagent show the presence of peroxy and hydroperoxy derivatives in varying amounts in most of the emulsions, apparently associated with triglycerides and phospholipids. Other colorimetric tests have been introduced, to detect carbohydrates and amine-type compounds. Improved thin layer chromatography development procedures indicate the presence of bound lipids in the water phase. A twodimensional TLC technique is illustrated. Practically all emulsions are continuing to show a decrease in pH as time passes. Some of the most recently submitted emulsions are showing a more rapid pH drop than has been previously noted. Book excerpt: Cottonseed oil, syntheic triglycerides, lecithin, Pluronic F68, Drewmulse 5998A, and Lipal 4P were studied by gas chromatography, thin layer chromatography (TLC), and column chromatography to develop methods of detecting and estimating the vrious major and minor components present in these aterials. GAS CHROMATOGRAPHY SHOWS PRESENCE OF UNEXPECTED QUANTITIES OF RELATIVELY VOLATILE IMPURITIES IN COTTONSEED OIL. Commercially available triglycerides show major impurities by TLC and gas chromatography. It is possible to prepare triglycerides free of all of these impurities. Gas chromatography was used to show the presence of relatively volatile components in Pluronic F68. The liquid (monoester) fraction of rewmulse 5998A contains considerable amouns of several components of varying polarity and probably different chemcal nature, based on exmination by TLC. TLC examination of the liquid (monoester) fraction of Lipal 4P shows at least five subsidiary components. A cobination of column chromatography and thin layer chromatography proceures may be used as the basis for quantitative estimtes of the cephalin, lipositol and lysolecithin content of purified lecithin of the type used in intravenous emusions.
