Por ejemplo, una agenda laboral colapsada impide darse el tiempo necesario para alimentarse de manera adecuada, lo que termina generando que recurrir a la comida rápida o productos ultra procesados sea la salida más fácil. Estos provocan una falsa sensación de saciedad momentánea y pasan a formar parte habitual del desayuno, almuerzo o cena, con consecuencias que no se aprecian de inmediato pero que a mediano o largo plazo condicionan brutalmente la salud de las personas. Esa es sólo una de las facetas de una realidad mucho más compleja, donde están involucradas la industria, la economía, las desigualdades, la educación, el sedentarismo o el estrés, entre otros aspectos. Y las consecuencias no solo afectan el bienestar de la población sino también impactan al medio ambiente y al planeta que conocemos, con todo lo que ello implica. El llamado que hacen los especialistas, cada vez con mayor frecuencia e insistencia, a transformar los hábitos de alimentación y a reconvertir la industria del sector es tan urgente como real. Los argumentos son de peso y están sustentados en estudios concretos. Estos esfuerzos han logrado permear, en parte, a las nuevas generaciones y ya no es tan extraño hablar de dietas basadas en plantas, consumo de alimentos naturales o mínimamente procesados, vegetarianismo o de entornos alimentarios saludables y sistemas alimentarios sostenibles. El libro que están por comenzar a “devorar” recoge en parte esos análisis que alertan de la necesidad de hacer cambios en estas materias. De forma conjunta con los cambios necesarios en los patrones actuales de consumo de alimentos, es vital transitar hacia sistemas alimentarios sostenibles que garanticen el acceso a dietas más saludables para toda la población; y satisfagan, en definitiva, el derecho humano a la alimentación adecuada de todas las personas. Entre la diversidad de herramientas disponibles para lograr este objetivo, la regulación juega un papel importante como parte de un conjunto de medidas necesarias para materializar la implementación de cambios a largo plazo, a favor de facilitar la transición hacia el consumo de dietas más saludables. En este sentido, se debe priorizar el derecho a una alimentación adecuada como marco legal fundamental de análisis para garantizar la seguridad alimentaria y nutricional en el contexto de sistemas alimentarios sostenibles, considerando a su vez otros elementos de los sistemas alimentarios y sus actores, sobre todo en el escenario que nos dejará la pandemia y la urgente necesidad de recuperación con transformación. Este documento revisa, en el marco legal del derecho a la alimentación adecuada, aquellas intervenciones normativas más adoptadas hasta la fecha en Argentina, Bolivia, Chile, Colombia, Ecuador, México, Perú y Uruguay, que se enfocan en mejorar el componente nutricional de los alimentos a lograr dietas más saludables.
