Its basis is the Symposium on Milk Proteins that was held at the Federal Dairy Research Centre in Kiel, FRG, in June, 1988. Scien tists from around the world attended and addressed pure, as well as applied fields of protein research and technology. This book is divided into five sections, each adapted from the symposium's invited lectures, short communications, and poster presentations. New criteria for the "bio logical value" of dietary proteins and their relationships are considered according to: - Milk Proteins and Nitrogen Equilibrium - Milk Proteins and Ligands - Milk Proteins: Structural and Genetic Aspects - Milk Proteins: Technological and Functional Aspects - Milk Proteins and Clinical Nutrition Generally, different dietary proteins are classified according to their "biological value," i.e., their capacity to cause different retention of nitrogen in the body. But we think there are other intriguing leads worth studying that may help to identify which dietary proteins are best recommended for specific dietary situations or clini cal conditions. In addition, we have taken into consideration new fields such as attempts to determine the three-dimensional structure of proteins using two-dimensional NMR spectroscopy, and the application of genetic engineering to the lactating cell. In other words, we are on the way to the transgenic cow with customized milk constituents and composition.

Proteins and nonprotein nitroge nous compounds playa crucial role in the nutritional value and sensory quality of seafoods as well as in the suitability of different species to various forms of processing, preservation, and use in other branches of the food industry. This role of proteins results from their basic chemical and biochemical properties and functions in different tissues. A presenta tion of the actual state of knowledge on seafood nitrogenous compounds in one volume may contribute to a better understanding of the involve ment of these components in all stages of handling and processing fish. Milk, the natural food during the early life of mammals, was proposed as the target standard. The milk standard diet was compared with proteins of different origins, amino acid pattern, or lacking an essential amino acid. A chemical score based on rat's milk (CSM-R) was developed to evaluate the quality of the protein diets; it combined determination of a protein's most limiting amino acid with a capacity for ranking proteins by nutritional values. Diets were evaluated for protein efficiency ration, body weight gain, levels of amino acids and protein complementation. Results indicated that rat milk contains a proportion of amino acids which provides maximum protein utilization in growing rats, and may also protect the lactating mother. Other diets were usually inferior. The CSM-R score appeared to be a useful analytic tool in evaluating the quality of dietary proteins.

A substantial quantity of cereals goes indirectly into food via feed to animals. Generally, cereal proteins are classified as proteins of lower biological value because of shortage in lysine and some other essential amino acids. Recent developments in the de termination and evaluation of the biological value of proteins and protein mixtures suggest that the oversimplified earlier evaluation of cereal proteins must be reviewed. This book contains the edited proceedings of the Inter national Symposium on "Amino Acid Composition and Biological Value of Cereal Proteins", held in Budapest, Hungary, Hay 31- June 1, 1983, under the sponsorship of the International Association for Cereal Chemistry, Hungarian Scientific Society for Food Industry and Grain Trust, Hungary, with supplemental invited contributions. Winberg established the basis for experimental studies in fish energetics with the publication of his monograph, Rate of Metabolism and Food Requirements of Fishes. His ultimate aim was to develop a scientific approach to fish culture and management, and the immense volume of literature generated in the ensuing years has been mainly in response to the demand for information from a rapidly expanding, world-wide aquaculture industry and to the shortcomings of contemporary practices in fisheries management. The purpose of this book is not to review this literature compre hensively, but, assuming an informed readership, to focus attention on topics in which new knowledge and theory are beginning to be applied in practice. Most emphasis has been placed on food; feeding; production (growth and reproduction) and energy budgeting, as these have most influence on the development of fish culture. Some chapters offer practical advice for the selection of methods, and warn of pitfalls in previous approaches. In others the influence of new theory on the interpretation of studies in fish energetics is discussed in the context of resource allocation and adaptation. This is valid with regard to both their chemical composition as well as their nutritive value. The development of new biochemical and physical methods has resulted in obtaining deep insights into the structures of seed proteins and their mutual interactions. Intensive exchange of information between the scientists participating in national and international research programmes has given strong impulses for intensifying the research in this field. For the quantitative and quali tative investigations of seed proteins, not only some model plants were used; on the contrary, they were carried out on a large number of different crops important for different regions of the earth. In this way, a level of knowledge has been reached which could not be expected in this diversity within such a short period. This holds not only true for biochemical but also for physiological characters of the species of the limiting amino acids studied. With regard to nutritional aspects, the problem was of special interest, but also seed proteins acting as antinutritional factors were analysed in detail. Based on the knowledge of seed protein structures, it was possible to perform investigations on the genetic basis of their synthesis. This was done under two different aspects: The basic knowledge on the genes involved should be widened; moreover, it should be tried to improve the seed proteins quantitatively and qualitatively under the influence of mutant genes.
