Moreover, by following the collective wisdom of our culinary ancestors we can both save money and drastically reduce food wastage. DEJA FOOD is a return to the food of times past. It is how we used to eat, being inventive with the less expensive cuts of meat, using richly flavoured leftovers to create stunning new dishes, making the most of seasonal ingredients served simply and deliciously in ways we have forgotten. It’s frugal, but full of flavour, deliciously different, yet proudly traditional. This delectable collection includes recipes for meat, poultry, game, offal, vegetable and fish. There are skinks, hashes, puddings and pies. Goose, shrimp, parsnips et al will be potted, stewed and fricasseed into hearty, flavourful food that stands up to the best modern recipes. And Mary-Anne will reveal the fascinating stories behind the dishes. DEJA FOOD is real food, perfected over centuries, that is just as mouth-watering today as it was then.

Available in PDF, EPUB and Kindle. Book excerpt: The English Market was established in 1788 and is famous throughout Ireland and beyond for its cornucopia of produce including olives, fish, organic meats and poultry, fruit and vegetables and delicious breads, cakes and cheeses. Recipes from the English Market showcases this exciting melting pot of foodstuffs, ingredients and different food cultures.Recipes from the English Market gives a potted history of each stall holder. For example, Donagh O'Reilly is a third generation tripe producer, one of the few left in Ireland. Donagh's family have traded dressed trip for over 100 years from their stall in the English Market. Each stall holder provides their favourite recipes using their own produce. We have Pat O'Connell's recipe for O'Connell's lemon sole fillets with Dublin Bay prawns. Today Pat's stall probably ranks as the most famous fish stall in both Ireland and the UK since the visit of Queen Elizabeth II during her state visit in May, 2011. The atmosphere, sights and smells make the English Market a shopping experience unlike any other in the city. There is a great mix of traditional Cork fare and exciting new foods from many parts of the world and together with the long standing family-run stalls contribute to the unique appeal and atmosphere of this market. It is no surprise then that the English Market was voted one of the top ten best food markets in Europe by the Observer Food Magazine and Rick Stein said "In my opinion this is the best covered market in the UK and Ireland."

Available in PDF, EPUB and Kindle. Book excerpt: The hundreds of recipes in Maxime de la Falaise's delight-ful book triumphantly attest to the virtues of Anglo-Saxon gastronomy. Rich with the historical sense of taste, this book allows you to cook the rudiments of a medieval royal banquet, an Elizabethan nursery breakfast, or an eighteenth-century tavern lunch. The recipes are divided into five chronological sections, each preceded by an introduction recounting the fashions and the changes in the food and drink of the period; together they provide an overview of the evolution of English cookery. The earliest recipes, dating from the thirteenth century, are presented in their original language ("Take faire Mutton that hath ben roste . . .") as well as in a modern translation, and all measures and quantities have been updated throughout. Many of the dishes are quite simple to make; others are, quite literally, fit for a king. All together they constitute a delectable, sensual cele-bration of the development of English cuisine.

Book excerpt: Having grown up in his parents’ gastropub, Jamie Oliver has always had a special place in his heart for British cooking. And in recent years there’s been an exciting revolution in the British food world in general. English chefs, producers, and artisans are retracing old recipes, rediscovering quality ingredients, and focusing on simplicity and quality. Jamie celebrates the best of the old and new (including classic British immigrant food) in his first cookbook focused on England. Here are over 130 great, easy-to-prepare recipes, ranging from salads—Heavenly Salmon and Epic Roast Chicken; to puddings—Rhubarb and Rice Pudding and Citrus Cheesecake Pots; to Sunday lunch—Guinness Lamb Shanks and Roast Quail Skewers; and, of course, the crumbliest scones. America has already fallen for the new British gastropub cooking, with popular restaurants by chefs such as April Bloomfield of The Spotted Pig and the John Dory. Now Jamie shows how to make the same delicious food at home. This is definitely not your grandmother’s mushy peas!

Book excerpt: This is an open access title available under the terms of a CC BY-NC-ND 4.0 International licence. It is free to read at Oxford Scholarship Online and offered as a free PDF download from OUP and selected open access locations. Middle English Medical Recipes and Literary Play, 1375-1500 is the first detailed, book-length study of Middle English medical recipes in their literary, imaginative, social, and codicological contexts. Analysing recipe collections in over seventy late medieval manuscripts, this book explores how the words and structures of recipes could contribute to those texts' healing purpose, but could also confuse, impede, exceed, and redefine that purpose. The study therefore presents a challenge to recipes' traditional reputation as mundane, unartful texts written and read solely for the sake of directing practical action. Crucially, it also relocates these neglected texts and overlooked manuscripts within the complex networks forming medieval textual culture, demonstrating that—though marginalized in modern scholarship—medical recipes were actually linguistically, formally, materially, and imaginatively interconnected with many other late medieval discourses, including devotional writings, romances, fabliaux, and Chaucerian poetry. The monograph thus models for readers modes of analysis and close reading that might be deployed in relation to recipes in order to understand better their allusive, fragmentary, and playful qualities as well as their wide-ranging influence on medieval imaginations.
