Book excerpt: Food process engineering, a branch of both food science and chemical engineering, has evolved over the years since its inception and still is a rapidly changing discipline. While traditionally the main objective of food process engineering was preservation and stabilization, the focus today has shifted to enhance health aspects, flavour and taste, nutrition, sustainable production, food security and also to ensure more diversity for the increasing demand of consumers. The food industry is becoming increasingly competitive and dynamic, and strives to develop high quality, freshly prepared food products. To achieve this objective, food manufacturers are today presented with a growing array of new technologies that have the potential to improve, or replace, conventional processing technologies, to deliver higher quality and better consumer targeted food products, which meet many, if not all, of the demands of the modern consumer. These new, or innovative, technologies are in various stages of development, including some still at the R&D stage, and others that have been commercialised as alternatives to conventional processing technologies. Food process engineering comprises a series of unit operations traditionally applied in the food industry. One major component of these operations relates to the application of heat, directly or indirectly, to provide foods free from pathogenic microorganisms, but also to enhance or intensify other processes, such as extraction, separation or modification of components. The last three decades have also witnessed the advent and adaptation of several operations, processes, and techniques aimed at producing high quality foods, with minimum alteration of sensory and nutritive properties. Some of these innovative technologies have significantly reduced the thermal component in food processing, offering alternative nonthermal methods. Food Processing Technologies: A Comprehensive Review, Three Volume Set covers the latest advances in innovative and nonthermal processing, such as high pressure, pulsed electric fields, radiofrequency, high intensity pulsed light, ultrasound, irradiation and new hurdle technology. Each section will have an introductory article covering the basic principles and applications of each technology, and in-depth articles covering the currently available equipment (and/or the current state of development), food quality and safety, application to various sectors, food laws and regulations, consumer acceptance, advancements and future scope. It will also contain case studies and examples to illustrate state-of-the-art applications. Each section will serve as an excellent reference to food industry professionals involved in the processing of a wide range of food categories, e.g., meat, seafood, beverage, dairy, eggs, fruits and vegetable products, spices, herbs among others.

Book excerpt: These proceedings highlight the fundamental researches and up-to-data developments on energy conversion and high-voltage application by means of low temperature and atmospheric pressure plasma. In recent years, plasma-assisted energy conversion gains increasing attention as an alternative to thermal-catalysis or electro-catalysis. These proceedings discuss and exchange cutting-edge scientific innovations and technological advances in fields like plasma-enabled synthesis of chemicals and fuels, plasma-enabled the environmental clean-up, plasma-enabled catalysis treatment, in-situ probing of plasma-catalyst interactions and its high-voltage applications, which show great potentials in industrial demands like CO2 hydrogenation, CH4 reforming and nitrogen fixation, plasma deposition, chemical synthesis, VOC abatement and high-voltage insulation. This collection of papers presents the main applications of plasma-induced energy conversion and high-voltage discharge in the form of separate chapters, including cutting-edge studies on conversion technology, complex mechanism simulation, in-situ detection and converged applications by artificial intelligence. These proceedings are suitable for researchers engaged in fields like plasma-catalysis, discharge diagnosis and modelling, chemical modelling and high-voltage applications. The major topics covered in the conference proceedings are: 1) Advanced plasma-catalysis conversion technology; 2) Advanced in-situ discharge diagnosis technology; 3) Advanced in-situ plasma-catalysis characterization; 4) Multi-scale or innovative modelling technology; 5) High-voltage discharge and application.

Book excerpt: This is a comprehensive description of the theoretical foundations and experimental applications of spectroscopic methods in plasma physics research. It introduces the classical and quantum theory of radiation, with detailed descriptions of line strengths and high density effects, and describes theoretical and experimental aspects of spectral line broadening. The book illustrates the concepts of continuous spectra, level kinetics and cross sections, thermodynamic equilibrium relations, radiative energy transfer, and radiative energy losses. The basics of plasma spectroscopy to density and temperature measurements and to the determination of some other plasma properties are also explored. Over one thousand references not only guide the reader to original research covered in the chapters, but also to experimental details and instrumentation.

Available in PDF, EPUB and Kindle. Book excerpt: This authoritative reference presents a comprehensive review of the evolution of plasma science and technology fundamentals over the past five decades. One of this field’s principal challenges has been its multidisciplinary nature requiring coverage of fundamental plasma physics in plasma generation, transport phenomena under high-temperature conditions, involving momentum, heat and mass transfer, and high-temperature reaction kinetics, as well as fundamentals of material science under extreme conditions. The book is structured in five distinct parts, which are presented in a reader-friendly format allowing for detailed coverage of the science base and engineering aspects of the technology including plasma generation, mathematical modeling, diagnostics, and industrial applications of thermal plasma technology. This book is an essential resource for practicing engineers, research scientists, and graduate students working in the field.

Available in PDF, EPUB and Kindle. Book excerpt: Proteins serve as an important nutritional as well as structural component of foods. Not only do they provide an array of amino acids necessary for maintaining human health but also act as thickening, stabilizing, emulsifying, foaming, gelling, and binding agents. The ability of a protein to possess and demonstrate such unique functional properties depends largely on its inherent structure, configuration, and how they interact with other food constituents, like, polysaccharides, lipids, and polyphenolic compounds. Proteins from animal sources have superior functionality, higher digestibility, and lower anti-nutrient components than plant proteins. However, consumer preferences are evolving worldwide for ethically and sustainably sourced, clean, cruelty-free, vegan or vegetarian plant-based food products. Unlike proteins from animal sources, plant proteins are more versatile, religiously, and culturally acceptable among vegetarian and vegan consumers and associated with lower food processing waste, water, and soil requirement. Thus, the processing and utilization of plant proteins have gained worldwide attention and as such numerous scientific studies are focusing on enhancing the utilization of plant proteins in food and pharmaceutical products through various processing and modification techniques to improve their techno-functional properties, bioactivity, bioavailability, and digestibility. Novel Plant Protein Processing: Developing the Foods of the Future presents a roadmap for plant protein science, and technology which will focus on plant protein ingredient development, plant protein modification, and the creation of plant protein-based novel foods. Key Features: Includes complete information about novel plant protein processing for use as future foods Presents a roadmap to upscale the meat analog technological processes Discusses marketing limitations of plant based proteins and future opportunities This book highlights the important scientific, technological advancements that are being deployed in the future foods using plant proteins, concerns, opportunities, and challenges, and, as an alternative to maintaining a healthy and sustainable modern food supply. It covers the most recent research related to the plant protein-based future foods which include their extraction, isolation, modification, characterization, development, and final applications. It also covers the formulation and challenges: emphasis on the modification for a specific use, legal aspects, business perspective, and future challenges. This book is useful for researchers, readers, scientists, and industrial people to find information easily.
