Book excerpt: From the James Beard Award-winning, New York Times-bestselling author. “Through the recipes for 10 classic meals, he covers how to cook almost anything.” —Ina Garten, the Barefoot Contessa From Scratch looks at ten favorite meals, including roast chicken, the perfect omelet, and paella—and then, through 175 recipes, explores myriad alternate pathways that the kitchen invites. A delicious lasagna can be ready in about an hour, or you could turn it into a project: try making and adding some homemade sausage. Explore the limits of from-scratch cooking: make your own pasta, grow your own tomatoes, and make your own homemade mozzarella and ricotta. Ruhlman tells you how. There are easy and more complex versions for most dishes, vegetarian options, side dishes, sub-dishes, and strategies for leftovers. Ruhlman reflects on the ways that cooking from scratch brings people together, how it can calm the nerves and focus the mind, and how it nourishes us, body and soul. “Like a master chef clarifying a murky stock into a crystal-clear consommé, Ruhlman detangles the complex web of technique, myth, and folklore that is cooking . . . The lessons are set up in such a way that you can decide exactly how deep a dive you want to take, though with a guide like Ruhlman at your side, that’s most likely a mouth-first leap straight into the deep end.” —J. Kenji López-Alt, New York Times-bestselling-author of The Wok “He’s like a good friend joining you in the kitchen, and this book will certainly become the home cook’s trusted companion.” —Thomas Keller, chef/proprietor, The French Laundry

Book excerpt: NEW YORK TIMES BESTSELLER From the host of Food Network’s Girl Meets Farm and bestselling author of the IACP award-winning Molly on the Range, a collection of cozy recipes that feel like celebrations. Home Is Where the Eggs Are is a beautiful, intimate book full of food that’s best enjoyed in the comfort of sweatpants and third-day hair, by a beloved Food Network host and new mom living on a sugar beet farm in East Grand Forks, MN. Molly Yeh’s cooking is built to fit into life with her baby, Bernie, and the naptimes, diaper changes, and wiggle time that come with having a young child, making them a breeze to fit into any sort of schedule, no matter how busy. They’re low-maintenance dishes that are satisfying to make for weeknight meals to celebrate empty to-do lists after long workdays, cozy Sunday soups to simmer during the first (or seventh!) snowfall of the year, and desserts that will keep happily under the cake dome for long enough that you will never feel pressure to share. The flavors in this book draw inspiration from a distinctive blend of Molly’s experiences—her Chinese and Jewish heritage, her time living in New York, her husband’s Scandinavian heritage, and their farm in the upper Midwest. She uses seasonal ingredients that are common in her region while singlehandedly supporting the za’atar and sumac import industry in her small town. These influences come together into fuss-free crave-able meals that dirty as few dishes as possible and offer loads of prep-ahead, freezing, and substitution tips, such as: Babka Cereal Mozzarella Stick Salad Doughnut Matzo Brei Ham and Potato Pizza Chicken and Stars Soup Orange Blossom Creamsicle Smoothies Hand-pulled Noodles with Potsticker Filling Sauce Marzipan Chocolate Chip Cookies In Home Is Where the Eggs Are, the feeling of home starts in the kitchen; just melt some butter, fry an egg, and build a little memory around it.

Available in PDF, EPUB and Kindle. Book excerpt: This fascinating study examines the meteoric career of a vigorous intellectual movement rising out of the Age of Jackson. As Americans argued over their destiny in the decades preceding the Civil War, an outspoken new generation of "ultra-democratic" writers entered the fray, staking out positions on politics, literature, art, and any other territory they could annex. They called themselves Young America--and they proclaimed a "Manifest Destiny" to push back frontiers in every category of achievement. Their swagger found a natural home in New York City, already bursting at the seams and ready to take on the world. Young America's mouthpiece was the Democratic Review, a highly influential magazine funded by the Democratic Party and edited by the brash and charismatic John O'Sullivan. The Review offered a fresh voice in political journalism, and sponsored young writers like Hawthorne and Whitman early in their careers. Melville, too, was influenced by Young America, and provided a running commentary on its many excesses. Despite brilliant promise, the movement fell apart in the 1850s, leaving its original leaders troubled over the darker destiny they had ushered in. Their ambitious generation had failed to rewrite history as promised. Instead, their perpetual agitation helped set the stage for the Civil War. Young America: The Flowering of Democracy in New York City is without question the most complete examination of this captivating and original movement. It also provides the first published biography of its leader, John O'Sullivan, one of America's great rhetoricians. Edward L. Widmer enriches his unique volume by offering a new theory of Manifest Destiny as part of a broader movement of intellectual expansion in nineteenth-century America.

Available in PDF, EPUB and Kindle. Book excerpt: The Young Americans were a nationalist movement within the Democratic Party made up of writers and politicians associated with the New York periodical, the Democratic Review. In this revealing book, Mark Power Smith explores the ways in which–in dialogue with its critics–the movement forged contrasting visions of American nationalism in the decades leading up to the Civil War. Frustrated, fifty years after independence, by Britain’s political and cultural influence on the United States, the Young Americans drew on a wide variety of intellectual authorities—in the fields of literature, political science, phrenology and international law—to tie popular sovereignty for white men to the universalist idea of natural rights. The movement supported a noxious program of foreign interventionism, racial segregation, and cultural nationalism. What united these policies was a new view of national allegiance: one that saw democracy and free trade not as political privileges but as natural rights for white men. Despite its national reach, this view of the Union inadvertently turned Northern and Southern states against each other, helping to cultivate the conditions for the Civil War. In the end, the Young America movement was ultimately consumed by the sectional ideologies it had brought into being.

Book excerpt: DIVDIVA young writer-to-be embarks on a comic coming-of-age journey through the crushing mediocrity of work, the vagaries of fate, and the mysteries of sex/divDIV A confused and conflicted but not altogether angry young man shares his observations, disappointments, rants, and sexual desires in a revealing series of letters to an unnamed friend. Our hero wants to be a writer, but is stuck doing mind-numbing work for an unscrupulous encyclopedia publisher. He muddles through two engagements, one to a bright-eyed Catholic virgin, the other to a woman pregnant with another man’s child. And the Great American Novel he is writing—about a man named Austin who is becoming invisible—may be a bit too much for the reading public to handle. But as long as he’s got his friends (like Jose, who is determined to bed and wed his cousin Rita the nun), his health (no thanks to the medical establishment that killed his father), and his libido, everything should turn out okay./divDIV Winner of the William Faulkner Foundation Award for notable first novel—more outrageous than Catcher in the Rye and more scandalous than Portnoy’s Complaint—Charles Simmons’s Powdered Eggs is an unforgettable view of young American life through an amusingly jaundiced eye./divDIV/div/div

Book excerpt: From the James Beard Award–winning chef Ashley Christensen comes a bold and revelatory reinvention of Southern food, as told through the recipes and stories from her iconic and beloved restaurant, Poole’s Diner. Ashley Christensen is the new face of Southern cooking, and her debut cookbook, Poole’s, honors the traditions of this celebrated cuisine, while introducing a new vernacular—elevated simple side dishes spiked with complex vinaigrettes, meatless mains showcasing vibrant vegetables, and intensified flavors through a cadre of back-pocket recipes that will become indispensable in your kitchen. Recipes like Turnip Green Fritters with Whipped Tahini; Heirloom Tomatoes with Crushed Olives, Crispy Quinoa, and White Anchovy Dressing; and Warm Broccoli Salad with Cheddar and Bacon Vinaigrette share the menu with the definitive recipe for Pimento Cheese, a show-stopping Macaroni au Gratin, and crave-worthy Challah Bread Pudding with Whiskey Apples and Creme Fraiche, all redefining what comfort food can be. Poole’s is also the story of how Christensen opened a restaurant, and in the process energized Raleigh’s downtown. By fostering a network of farmers, cooks, and guests, and taking care of her people by feeding them well, she built a powerful community around the restaurant. The cookbook is infused with Christensen’s generous spirit and belief that great cooking is fundamental to good living. With abundant, dramatically beautiful photography and a luxe presentation, Poole’s is a landmark addition to the cookbook canon, a collection from which readers will cook and find inspiration, and pass down for generations to come.
