Book excerpt: Amino acids (AAs) are not only building blocks of protein, but are also signalling molecules as well as regulators of gene expression and the protein phosphorylation cascade. Additionally, AAs are key precursors for syntheses of hormones and low-molecular weight nitrogenous substances with each having enormous biological importance. For example, physiological concentrations of AA metabolites (e.g., nitric oxide, polyamines, glutathione, taurine, thyroid hormones, and serotonin) are required for cell functions. Growing evidence shows that humans and animals have dietary requirements for all proteinogenic AAs. Mammals, birds and fish also have species- and age-dependent needs for some AA-related substances. However, elevated levels of other products (e.g., ammonia, homocysteine, H2S, and asymmetric dimethylarginine) are pathogenic factors for neurological disorders, oxidative stress, and cardiovascular disease. Thus, optimal amounts of AAs and their ratios in diets and circulation are crucial for whole body homeostasis and health. Adequate provision of one or a mixture of functional AAs or metabolites may be beneficial for ameliorating health problems at various stages of the life cycle (e.g., fetal growth restriction, neonatal morbidity and mortality, weaning-associated intestinal dysfunction and wasting syndrome, obesity, diabetes, cardiovascular disease, the metabolic syndrome, and infertility). Dietary supplementation of these nutrients can also optimize the efficiency of metabolic transformations to enhance muscle growth, milk production, and athletic performance, while preventing excess fat deposition and reducing adiposity. Therefore, functional AAs hold great promise in improving the growth, health and well-being of individuals. Proteins can account for up to 40% of the dry weight of various types of seeds, thereby making a large contribution to the nutritional quality and processing properties of seeds. It is, therefore, not surprising that seed proteins were among the first plant components to be systematically studied, some 250 years ago, and have been a major focus of research over the past 100 years. The properties and behaviour of seed proteins pervade modem life in numerous ways. For example, legume and cereal proteins are used'in the production of a wide range of meat-free foods; the process of bread-making is dep~ndent on the physical chemical properties of wheat seed proteins; and in developed, as well as developing, countries, nutritional deficiencies among vegetarian diets are avoided through balancing legume and cereal seeds as sources of dietary proteins. Understanding seed proteins, in order to improve their composition and properties and to increase their concentrations, will thus continue to be an important research objective for the future. Book excerpt: Current growth in global aquaculture is paralleled by an equally significant increase in companies involved in aquafeed manufacture. Latest information has identified over 1,200 such companies, not including those organizations in production of a variety of other materials, i. e. , vitamins, minerals, and therapeutics, all used in varying degrees in proper feed formulation. Aquaculture industries raising particular economically valued species, i. e. , penaeid shrimps and salmonids, are making major demands on feed ingredients, while relatively new industries, such as til apia farming, portent a significant acceleration in demand for properly formulated aquafeeds by the end of the present decade and into the next century. As requirements for aquafeeds increases, shortages are anticipated in various ingredients, especially widely used proteinaceous resources such as fish meal. A variety of other proteinaceous commodities are being considered as partial or complete replacement for fish meal, especially use of plant protein sources such as soybean meal. In the past five years, vegetable protein meal production has increased 10% while fish meal production has dropped over 50%, since 1989, largely attributed to overfishing and serious decline in wild stock. Throughout fisheries processing industries, traditional concepts as "waste" have given way to more prudent approaches, emphasizing total by-product recovery. Feed costs are a major consideration in aquaculture where in some groups, i. e. , salmonids, high protein-containing feeds using quality fish meal, can account for as much as 40 to 60% of production costs.
