This book was released on 2017-11-19 with total page 112 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from An Economic Survey of the Los Angeles Milk Market This study was undertaken during the summer of 1930 at the request of several organizations representing the dairy industry of California. A bulletin on Economic Aspects of the Dairy Industry3 published by the California Agricultural Experiment Station in 1927 had attracted considerable attention and had suggested to some leaders of this industry the need for more specific studies in this field. In 1929 a committee was appointed by the State of California Milk Distributors' Association to consider the problem of surplus milk in general, and in December, 1929, a formal request was made to the California Agricultural Experiment Station to undertake a special study of this question. In February, 1930, similar requests were made by a general committee of producers and distributors, which was created to deal with certain problems in the Los Angeles area, by the Southern California Milk Dealers' Association and by the Butterfat Club of San Francisco. These requests were the result of unstable market conditions due to a large surplus of market milk in Los Angeles particularly. Through the courtesy of Cornell University, the services of the author were made available for this study, beginning September 1, 1930. Meanwhile, some preliminary work was done by Professors H. R. Tolley and E. C. Voorhies and Mr. M. H. Blank. The time which the author could devote to the work was limited to a period of five months. Consequently it was necessary to confine the survey to certain aspects of the situation that promised to yield the most useful information in the time available. Data on the costs of production and distribution of milk were not collected.4 Particular attention was given to the surplus problem and to the relations between producers and distributors. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Economies in Dairy Farming Some two years since, I was asked by the Proprietors of Country Life to write for them a book on Dairy Farming. Although flattered by such a request, at that time I felt obliged to decline because my time was fully occupied, and also it appeared to me that so much having been already written on the subject by older and more experienced men, to write anything on the same lines would be a work of supererogation. Thinking over the matter subsequently, in connection with the Butter Test and Milking Trials with which I have been associated during the past ten or twelve years, and recollecting the short, indeed, almost meagre reports which have been given of each such trial (not at all commensurate with the expenses incurred in carrying them out), I felt that perhaps it was my duty to detail at greater length my experiences generally with regard to the whole question of "manufacturing" milk, as noted from time to time by me at those trials. Hence the following pages. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. This book was released on 2017-11-24 with total page 90 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Prices and Consumption of Milk in Specific Cities as Related to Industrial Payrolls and Other Economic Factors In studying differences in the behavior of different milk markets, numerous questions arise, such as: What are some of the reasons for the wide differences in the per-capita consumption in the different markets? Why, for example, was the decline from 1929 to 1932 in consumption of both milk and cream so much greater in Philadelphia than in Boston or New York, and why is the per-capita consumption of milk and cream in both Boston and New York so much higher than that for Philadelphia? Also, how can the per-capita consumption of milk be increased? Answers to these questions may be useful in formulating policies for fluid-milk markets. Methods of milk production and milk distribution, as related to marketing policies, are subjects for another study. Detailed tables in this study not essential to the text are shown in the Appendix.
