Book excerpt: This NATO Advanced Study Institute, held in Geilo between March 29th and April 9th 1981, was the sixth in a series devoted to the subject of phase transitions and instabilities. The present institute was intended to provide a forum for discussion of the importance of nonlinear phenomena associated with instabilities in systems as seemingly disparate as ferroelectrics and rotating buckets of oil. Ten years ago, at the first Geilo school, the report of a central peak in the fluctuation spectrum of SrTi0 close to its 3 106 K structural phase transition demonstrated that the simple soft-mode theory of such transitions was incomplete. The missing ingredient was the essential nonlinearity of the system. Parti cipants at this year's Geilo school heard assessments of a decade of experimental and theoretical effort which has been expended to elucidate the nature of this nonlinearity. The importance of order ed clusters and the walls which bound them was stressed in this con text. A specific type of wall, the soliton, was discussed by a number of speakers. New experimental results which purport to demonstrate the existence of solitons in a one-dimensional ferromagnet were presented. A detailed discussion was given of the role of solitons in transport phenomena in driven multistable systems, typified by a sine-Gordon chain.

Book excerpt: This volume contains most of the papers presented at the "Workshop on Quasielastic Light Scattering Studies of Fluids and Macromolecular Solutions" held at CISE, Segrate (Milano), Italy, from 11 to 13 May, 1979. Quasielastic light scattering (also called self-beating spectroscopy or intensity correlation spectroscopy) is the technique, introduced by Benedek and coworkers and by Cummins and coworkers about 15 years ago, by which dynamical information about a scattering medium is obtained through the measurement of the power spectrum (or the intensity correlation function) of the laser light scattered from the medium. The technique received in the early seventies a considerable impulse from the development of real-time fast digital correlators. The aim of the Workshop was to bring together a selected number of researchers in order to discuss recent developments in quasielastic light scattering and related optical methods and to report about new applications of the technique in physics, chemistry and biology. The first two days of the meeting were devoted to the oral presentations of papers. In the third day an informal session was held which included a very lively and thorough discussion of the highlights of the Workshop. Most part of the technical problems were debated during the informal session and during the subsequent visits to the light scattering laboratory in CISE.

Examples of emulsion-based foods include ice cream, yoghurt, and mayonnaise. The physicochemical properties of emulsions play an important role in food systems, as they directly contribute to the texture, sensory and nutritional properties of foods. One of the main properties is stability, which refers to the ability of an emulsion to resist physical changes over time. The development of an effective strategy to prevent undesirable changes in the properties of a particular food emulsion depends on the dominant physicochemical mechanism(s) responsible for the changes. In practice, two or more of these mechanisms may operate in concert. It is therefore important for food scientists to identify the relative importance of each mechanism, the relationship between them, and the factors that influence them, so that effective means of controlling the stability and physicochemical properties of emulsions can be established. Several techniques are used to study the physical behavior and structure of emulsions. Each technique has its advantages and disadvantages and provides different insights into the destabilization mechanisms. Among the oldest methods used to study emulsion stability is visual observation and small deformation rheometry. More recently, other techniques, such as ultrasound profiling, microscopy, droplet size distribution, and measurement of surface concentration to characterize adsorbed protein at the interface, have also been employed. Some of these techniques, such as droplet size distribution, involve some form of dilution. However, dilution disrupts some structures that play an important role in stability. The ability to study the stability of food emulsions in their undiluted form may reveal subtle nuances about their stability. Diffusing wave spectroscopy (DWS), laser scanning confocal microscopy (LSCM), nuclear magnetic resonance (NMR), and Turbiscan are among the more powerful, non-perturbing techniques used to characterized emulsions.
