Book excerpt: Noting that young children learn about food and nutrition through food preparation, eating together, play, science activities, and games, this resource guide addresses food learning and nutritional provisions in early childhood programs. The guide is designed to meet the needs of children and adults in child care centers, family child care programs, preschools, kindergartens, and before- and after-school programs. The guide presents six approaches to food learning with suggestions for many hands-on activities: (1) children's decision making; (2) science and mathematics; (3) food cycles; (4) language, drama, and social studies; (5) physical activities and motor skills; and (6) food selection, preparation, and presentation. Suggestions are also offered about food provision in early childhood settings. The chapters are: (1) "An Introduction to Food Foundations," discussing the values of foods and eating, adult roles in facilitating food events with children, and the kinds of learning children gain from a variety of food opportunities; (2) "A Framework for Learning about Food," focusing on key principles for formal and informal curricula, learning and teaching considerations, and the learning process; (3) "Approaches to Children's Food Learning," introducing the six approaches and including sample activities; (4) "Food and Nutrition Issues and Information," discussing nutrition guidelines, infants' and children's nutritional needs, special food needs, meal planning, safety and food hygiene, and information for parents; (5) "Making Decisions about Food Foundations," including information on children's rights, negotiating food foundations, sample food education and nutrition policies, and a management process for food issues in early childhood programs. (Contains references and recommended readings organized by chapter.)(KB)

Book excerpt: This is not a cookbook! You Can Do This! Cooking Up a Happier You for You and Yours is instead a self-help guide to happiness. "This book is a sort of Self-Confidence 101," says author Jim Te Selle. When his life was at its lowest, he came up with a plan to get it back on track. In his own words: "This is a product of what I had to learn in order to get my life squared away. I woke up one morning in a treatment center. My wife had left me. I was almost broke and was raising twin boys by myself. I couldn't believe it. I had done all the things an American dad is supposed to do: college, marriage, job, mortgage, kids. And yet I was totally unhappy and not a little bit screwed up. What happened? I had no clue." If your life isn't going quite the way you'd like it, if your dream seems out of reach, don't worry. "I had to learn to believe in myself. This book offers one way to do that. "You can do this!"

I become one of three optometrists in the nation with a Fellowship in Anti-Aging and Regenerative Medicine and a Fellowship in Metabolic and Nutritional Medicine. Now I feel compelled to share my knowledge with as many people as possible to help others save their vision. In Beyond Carrots, I tell my story and share the emotions that go along with a diagnosis of possible blindness. It is amazing how the body is truly connected to the eyes. What happens to the body directly impacts your vision. So, regardless of whether or not you are experiencing a potential eye disease, Beyond Carrots can help better your health! Book excerpt: The New York Times bestseller that gives readers a paradigm-shattering new way to think about motivation from the author of When: The Scientific Secrets of Perfect Timing Most people believe that the best way to motivate is with rewards like money—the carrot-and-stick approach. That's a mistake, says Daniel H. Pink (author of To Sell Is Human: The Surprising Truth About Motivating Others). In this provocative and persuasive new book, he asserts that the secret to high performance and satisfaction-at work, at school, and at home—is the deeply human need to direct our own lives, to learn and create new things, and to do better by ourselves and our world. Drawing on four decades of scientific research on human motivation, Pink exposes the mismatch between what science knows and what business does—and how that affects every aspect of life. He examines the three elements of true motivation—autonomy, mastery, and purpose-and offers smart and surprising techniques for putting these into action in a unique book that will change how we think and transform how we live.

Book excerpt: 88 Meal and Juice Recipes to Improve Your Eye Sight: Prevent Loss of Vision by Feeding Your Body Vitamin Rich Foods By Joe Correa CSN A proper diet is definitely a much easier way to prevent eye problems and so many other different diseases and conditions. Its influence on eye sight is often unjustly neglected because most people blame these problems with too much time on the computer or cell phone. This is true, but just like everything else, there is a lot you can do from the inside to help your body heal and strengthen on the outside. A lack of nutrients in early childhood has proven to cause eye sight problems in adulthood. This means that there is a lot you can do to help yourself and your family to prevent this problem early on. This book contains delicious meal and juice recipes prepared with precisely chosen ingredients that will help keep your eye sight health in check. Vegetables like carrots, spinach, kale, and other leafy greens are natural antioxidants that will boost your eye nutrition and overall health. Legumes, on the other hand, are full of precious zinc, while beans are a perfect source of bioflavonoids that prevent and lower the risk of eye health complications. Omega-3 fatty acids can be found in fish like salmon, mackerel, and tuna. Omegas are really one of the best medicines you can possibly find in food, but when you combine them with a huge amount of vitamin A in Salmon with Carrots, you create a great combination of nutrients for your eyes. All orange, red, and yellow vegetables are really a great source of carotenoids which is one of the best-known compounds for eye health. This is exactly why I have collected plenty of recipes based on tomatoes, sweet potatoes, carrots, and bell peppers. These recipes are healthy and tasty but at the same time will do a great job to protect your eyes. I have used those foods to come up with tasty recipes that you can make by yourself at home. The recipes in this book offer a magnificent variety of both flavor and natural goodness, which should aid your efforts to improve the function of your eyes. This book is a collection of meal and juice recipes that incorporate vitamins and minerals directly from Mother Nature. Zesty oranges, beneficial leafy greens, carrots, and other fruits and vegetables in various combinations will satisfy every taste. Try them all and see which ones are your favorite!

This book was released on 2002-07-19 with total page 798 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Based on the Institute of Medicine's review of the scientific literature regarding dietary micronutrients, recommendations have been formulated regarding vitamins A and K, iron, iodine, chromium, copper, manganese, molybdenum, zinc, and other potentially beneficial trace elements such as boron to determine the roles, if any, they play in health. The book also: Reviews selected components of food that may influence the bioavailability of these compounds. Develops estimates of dietary intake of these compounds that are compatible with good nutrition throughout the life span and that may decrease risk of chronic disease where data indicate they play a role. Determines Tolerable Upper Intake levels for each nutrient reviewed where adequate scientific data are available in specific population subgroups. Identifies research needed to improve knowledge of the role of these micronutrients in human health. This book will be important to professionals in nutrition research and education.
