Book excerpt: Excerpt from Dietary Studies at the Maine State College in 1895 Sir: I have the honor to transmit herewith a report on dietary studies at the Maine State College in 1895, by Prof. W. H. Jordan. These investigations constitute part of the inquiries made with funds appropriated by Congress to enable the Secretary of Agriculture to investigate and report. Upon the nutritive value of the various articles and commodities used for human food, and were conducted under the immediate supervision of Prof. W. O. Atwater, special agent in, charge 'oi nutrition investigations, in accordance with instructions given by the Director of this Office. In carrying out the provisions of the above act representative locali ties have been selected in different parts of the country and dietary studies have been made. These have hitherto been attempts to learn the kinds and amounts of food actually consumed by people of various ages and occupations in different regions. Although the number of women’s colleges has plummeted from a high of 268 in 1960 to 38 in 2016, Douglass is flourishing as it approaches its centennial in 2018.
