Ces actions sont menées auprès d’enfants scolarisés en CE1-CE2, ils bénéficient principalement d’un dépistage bucco-dentaire. La partie éducation à la santé bucco-dentaire appuie surtout sur le facteur de l’hygiène bucco-dentaire. Le rôle de l’alimentation et notamment des produits sucrés est abordé de façon succincte lors de cette séance de prévention bucco-dentaire. Nous avons souhaité nous intéresser plus particulièrement à la partie alimentation dans l’éducation à la santé bucco dentaire. Dans un premier temps, nous développerons l’importance de l’éducation à la santé bucco-dentaire et le rôle du facteur alimentaire dans la santé bucco-dentaire. Puis, au travers d’une enquête menée auprès des élèves du CE1-CE2 reçus en séance de dépistage au sein du service d’odontologie Caumartin, un état des lieux sur leurs connaissances et habitudes hygiéno-diététiques sera établi. La dernière partie portera sur la recherche d’outils pédagogiques d’éducation nutritionnelle et leur mise en place éventuelle au sein du programme de dépistage et d’éducation bucco-dentaire du service d’Odontologie Caumartin du CHRU de Lille.

Ce phénomène est notamment attribué à une trop faible activité physique quotidienne et à une alimentation déséquilibrée et trop énergétique. On sait, a contrario, qu'une alimentation saine et équilibrée constitue un facteur de santé, tant générale que bucco-dentaire. C'est pourquoi les gouvernements français et canadien ont mis en oeuvre des programmes d'information et de prévention des maladies de civilisation, en publiant notamment des guides alimentaires destinés à éduquer la population en matière de nutrition, à orienter les choix alimentaires des individus et à servir de support aux conseils nutritionnels délivrés par les professionnels de santé. L'objet de cette thèse est d'étudier les relations entre nutrition et santé, notamment sur le plan bucco-dentaire, et de s'interroger sur le rôle du chirurgien-dentiste dans ce domaine.Nous nous intéresserons d'abord à la santé générale, aux besoins nutritionnels de l'organisme et au rôle des différents nutriments. Nous verrons alors quelles sont les bases d'une alimentation équilibrée pour les experts canadiens et français. L'impact de la nutrition sur les structures bucco-dentaires sera ensuite étudié, afin de dégager les principales mesures nutritionnelles favorables à la santé buccale. Enfin, une méthode d'analyse du comportement alimentaire adaptée à la pratique odontologique sera présentée.

Ce dernier a pour ambition de toucher l’ensemble de la population à tous les âges de la vie. Quant aux actions entreprises au niveau régional et local, elles concernent essentiellement les populations scolaires. En effet, notre étude montre que l’implication des collectivités territoriales est variée. Des initiatives sous forme de réseaux de santé bucco-dentaire voient le jour. Ils sont principalement dirigées vers les personnes âgées et les personnes handicapées ce qui peut laisser espérer des résultats aussi probants que ceux obtenus auprès des enfants.
