En él se explica cómo realizar todo tipo de operaciones relativas a la parte económica del bar-cafetería. En el primer capítulo se explican el concepto del bar-cafetería como establecimiento y sus tipos, además de en qué consiste un plan de marketing y cómo hacer un análisis de mercado. En el segundo capítulo se detallan los trámites que hay que realizar para la puesta en marcha del bar-cafetería y ante qué organismos, y se estudia el tipo jurídico del empresario, entre otros. En el tercer capítulo se trata la gestión del aprovisionamiento, el ciclo de compra, la recepción y el almacenamiento de géneros, así como la gestión y el control de inventarios, los registros documentales y las fichas técnicas. En el cuarto capítulo se aborda el control de consumos y costes de los productos, el control por copeo y los escandallos, además de los métodos de fijación de precios. En el quinto capítulo se explica el control general de la actividad de bar-cafetería, desde la determinación del cliente objetivo o la elaboración del pedido hasta el control de las facturas y el cierre de caja. Por último, en el sexto capítulo se da respuesta a las cuestiones relacionadas con la gestión y el control comercial, informático y de calidad en restauración, como la estrategia de precios, el registro de la marca, las acciones de promoción y publicidad y las normas de calidad para la gestión y el control de esta. Además, la obra ofrece gran número de imágenes, cuadros y ejemplos de los diferentes documentos a utilizar. Asimismo, se incluyen actividades propuestas y resueltas para afianzar los conocimientos, junto con útiles actividades al término de cada capítulo para repasar los conocimientos adquiridos. Al mismo tiempo, el enfoque elegido es práctico y el lenguaje empleado, claro y sencillo, para que la compresión y el aprendizaje de los contenidos sean lo más efectivos posible. La autora, licenciada en Ciencias Económicas por la Universidad de Santiago de Compostela, posee una amplia trayectoria profesional. Ha impartido cursos para la Universidad Popular en la rama económica, entre otras materias, sobre contabilidad, gestión del aprovisionamiento y compraventa; y en la rama laboral sobre cuestiones como la elaboración de nóminas o los seguros sociales.
