Book excerpt: Au cours de la première partie, on s'intéresse à la mise en place d'un modèle pour l'étude des écoulements diphasiques visco-élastiques. On exprime d'une part le caractère diphasique du milieu en faisant intervenir un paramètre d'ordre et en prenant en compte les théories de Cahn et Hilliard sur les interactions thermodynamiques entre les deux phases, d'autre part l'effet visco-élastique grâce à une loi de type Oldroyd. Au cours de la seconde partie, on étudie les propriétés mathématiques du modèle. On montre des résultats d'existence et d'unicité complétant ainsi les travaux concernant les modèles monophasiques. Dans la dernière partie, on valide qualitativement le modèle via la mise en place d'un schéma numérique. Plusieurs applications proches de contextes physiques bien précis sont réalisées. On observe le comportement des fluides complexes sous cisaillement (décomposition spinodale). Ensuite, on compare des étirements de fibres réalisés numériquement avec des expériences réelles. Enfin, on réalise des tests de remplissage de cuve mettant l'accent sur les propriétés d'instabilité des fluides complexes.
