Book excerpt: The Encyclopedia of Color Science and Technology provides an authoritative single source for understanding and applying the concepts of color to all fields of science and technology, including artistic and historical aspects of color. Many topics are discussed in this timely reference, including an introduction to the science of color, and entries on the physics, chemistry and perception of color. Color is described as it relates to optical phenomena of color and continues on through colorants and materials used to modulate color and also to human vision of color. The measurement of color is provided as is colorimetry, color spaces, color difference metrics, color appearance models, color order systems and cognitive color. Other topics discussed include industrial color, color imaging, capturing color, displaying color and printing color. Descriptions of color encodings, color management, processing color and applications relating to color synthesis for computer graphics are included in this work. The Encyclopedia also delves into color as it applies to other domains such as art and design – ie – color design, color harmony, color palettes, color and accessibility, researching color deficiency, and color and data visualization. There is also information on color in art conservation, color and architecture, color and educations, color and culture, and an overview of the history of color and comments on the future of color. This unique work will extend the influence of color to a much wider audience than has been possible to date.

» - Dr David Servan-Schreiber. Book Synopsis Omega-3 Delivery Systems by : Pedro J. García-Moreno
Download or read book Omega-3 Delivery Systems written by Pedro J. García-Moreno and published by Elsevier. This book was released on 2021-07-28 with total page 506 pages. Available in PDF, EPUB and Kindle. Book excerpt: Omega-3 Delivery Systems: Production, Physical Characterization and Oxidative Stability offers the most recent updates for developing, characterizing, and stabilizing both traditional and novel omega-3 delivery systems, including their final incorporation into food matrices and physicochemical changes during digestion. The book brings chapters on novel omega-3 delivery systems (e.g., high-fat emulsions, Pickering emulsions, electrosprayed capsules, and solid lipid nanoparticles), the application of advanced techniques to evaluate physical and oxidative stabilities (e.g., SAXS, SANS, ESR, and super-resolution fluorescence microscopy), and new developments of food enrichment and physicochemical changes during digestion. The book provides a unique multidisciplinary and multisectoral approach, i.e., featuring authors from industry and academy. Long chain omega-3 polyunsaturated fatty acids (PUFA) present numerous health benefits; however, the consumption of natural products rich in omega-3 PUFA (e.g., fish, krill, and algae) is not enough to reach the daily-recommended values. Therefore, the food industry is highly interested in producing omega-3 fortified foods. Brings a holistic approach of omega-3 delivery systems, bringing scientific understanding on production, physical characterization, and oxidative stability Covers key aspects to develop, characterize, and use omega-3 delivery systems for food enrichment, considering physicochemical changes occurring during digestion Serves as an interface between lipid oxidation and colloids chemistry, encapsulation techniques, soft matter physics, food development, and nutrients bioavailability

Book Synopsis Dietary ω3 and ω6 Fatty Acids by : Corraldo Galli
Download or read book Dietary ω3 and ω6 Fatty Acids written by Corraldo Galli and published by Springer. This book was released on 1989-08-01 with total page 452 pages. Available in PDF, EPUB and Kindle. Book excerpt: On June 24-26, 1985, a major International Conference on the Hea1th Effects of P01yunsaturated Fatty Acids in Seafoods was held in Washington, D. C. The conference had two objectives: (1) to review the research data on the health effects of polyunsaturated fatty acids in seafoods in terms of the impact of omega-3 fatty acids on eicosanoid formation, thrombosis and inflammation, and the role of docosahexaenoic acid in membrane function and metabolism, and (2) to develop a research agenda to determine the spectrum of the health effects of polyunsaturated fatty acids of seafood origin in the American diet. The 1985 conference established the fact that omega-3 fatty acids of marine origin - eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) - play important roles in prostaglandin metabolism, thrombosis and atherosc1erosis, immunology and inflammation, and membrane function. In response to the conference recommendations, the Congress of the United States provided special funding for the establishment of a "test materials 1aboratory" within the US Department of Commerce to produce under documented quality contr01 the types and quanti ties of omega-3 te~3t materials required by biomedica1 researchers. The forms of test materials to be produced include refined fish oil, polyunsaturated fatty acid enhanced triglycerides, concentrates of esters of fatty acids, purified omega-3 fatty acids, and omega-3 mono-, di- and tri~lyceride mixtures.

This book was released on 2004 with total page 124 pages. Available in PDF, EPUB and Kindle.
