Book excerpt: Roots and tubers are considered as the most important food crops after cereals and contribute significantly to sustainable development, income generation and food security especially in the tropical regions. The perishable nature of roots and tubers demands appropriate storage conditions at different stages starting from farmers to its final consumers. Because of their highly perishable nature, search for efficient and better methods of preservation/processing have been continuing alongside the developments in different arena. This book covers the processing and technological aspects of root and tuber foods, detailing the production and processing of roots and tubers such as taro, cassava, sweet potato, yam and elephant foot yam. Featuring chapters on anatomy, taxonomy and physiology, molecular and biochemical characterization, GAP, GMP, HACCP, Storage techniques, as well as the latest technological interventions in Taro, Cassava, Sweet potato, yam and Elephant foot Yam.

Available in PDF, EPUB and Kindle. Book excerpt: Food Science and Technology: A Series of Monographs: Food Texture and Viscosity: Concept and Measurement focuses on the texture and viscosity of food and how these properties are measured. The publication first elaborates on texture, viscosity, and food, body-texture interactions, and principles of objective texture measurement. Topics include area and volume measuring instruments, chemical analysis, multiple variable instruments, soothing effect of mastication, reasons for masticating food, rheology and texture, and the rate of compression between the teeth. The book then examines the practice of objective texture measurement and viscosity and consistency, including the general equation for viscosity, methods for measuring viscosity, factors affecting viscosity, tensile testers, distance measuring measurements, and shear testing. The manuscript takes a look at the selection of a suitable test procedure and sensory methods of texture and viscosity measurement. Discussions focus on nonoral methods of sensory measurement; correlations between subjective and objective measurements; variations on the texture profile technique; and importance of sensory evaluation. The publication is a vital source of information for food experts and researchers interested in food texture and viscosity.

This book focuses on the FAM- project (FAM Munich Research Network on Agroecosystems) of the 1990s as a means to assessing, forecasting, and evaluating changes in the agroecosystems that are necessary for agricultural sustainability. The management of two separate management systems: an organic and an integrated farming system are described to provide an interdisciplinary approach Changes of matter fluxes in soils, changes of trace gas fluxes from soils, precision farming in a small scale heterogen landscape, influence of management changes on flora and fauna, as well as the development of agroecosystem models, the assessment of soil variability and the changes in nutrient status are important aspects of this book. * Contains detailed results and insight of a long-time project on agricultural sustainability * Provides an interdisciplinary approach for comprehensive understanding by scientists and researchers of soil, plants, agriculture, and environment * Includes an international perspective

Book excerpt: This study of the dioscorea genus or yam, consisting of 600 species, is a synthesis of new information. In this world of famine, the yam must play a leading role in the regions it is grown. Its cultivation may even increase once the problems which this book highlights have been resolved. The text fills a critical gap, summarizing what is known about the yam; it is also significant because it asks many questions, and encourages further experimentation.

Available in PDF, EPUB and Kindle. Book excerpt: It is important to include Tuber and Root Crops in the Handbook of Plant Breeding. They include starchy staple crops that are of increasing importance for global food security and relief of poverty, important millennium goals for the United Nations. Indeed, 2008 was the UN International Year of the Potato in recognition of this role of the potato as the world’s third most important food crop after wheat and rice. The other major staples are cassava, sweetpotato and yam. Together they occupy about 50 million hectares, with production at 640 million metric tons, of which 70% is in developing countries. In total there are more than 30 species of Root and Tuber Crops grown in the world today. Given the content of other volumes in the series, it makes sense to include sugar and fodder beets; swedes and turnips; and minor root and tuber crops so that the book series is as complete as possible. Like the other volumes in the series, this one will present information on the latest in applied plant breeding using the current advances in the field, from an efficient use of genetic resources to the impact of biotechnology in plant breeding. Seven crop specific chapters are proposed, together with an introduction to this diverse set of plant species. Outstanding scientists for each crop species are proposed as senior authors, who may invite co-authors to contribute part of a chapter. In order to increase the overall acceptance of the volume, balance will be sought with authors from different research groups/countries who will be asked to contribute and collaborate where appropriate. The book should be of interest to researchers in both academic and industrial settings, and in both developed and developing countries, as well as students and teachers of plant breeding. It is currently extremely important to educate and train a new generation of plant breeders given the challenges faced by humankind in producing more food for an expanding global population during a period of environmental (including climate) change.

Available in PDF, EPUB and Kindle. Book excerpt: "Riddle me this, riddle me that, guess me this riddle, and perhaps not: A we run things, things no run we. Who could that be?" One possible answer: Jamaican sprinters. Enquiring minds want to know: Why do Jamaicans run so fast? Usain Bolt may be the most recent and the most spectacular Jamaican practitioner of the art of speed, but he and Shelly-Ann Fraser stand on the shoulders of giants of both genders, heirs to a pedigree that goes back at least a hundred years to the teenaged Norman Manley and before. For years before the explosion of "Lightning" Bolt on the Beijing Olympics track, the consistent speediness of men and women from this small island had been the subject of serious and humorous speculation, pride and "su-su". What is the "gold" that is mined so consistently by Jamaican sprinters that permits the little country to claim a place among the top five countries, measured in terms of medals per capita of population, in almost every Olympics since the Second World War - and all on the basis of athletics, mostly the sprints (400 metres and under)? Can science explain it? Does the touchy area of genetics - even though, scientifically speaking, there's no such thing as "race" - explain it? For instance, all the current world record holders for the sprints - and most of the former for the past fifty years or so - have been born in the Americas, descendants of slaves of West African lineage. Is running fast "in the blood", so to speak? Or is it as simple as the varieties of yam (twenty-two at last count) to be found on the hills of Jamaica and in the stomachs of its people? Behind the simple tales of the tape are theories and questions that have attracted fourteen specialists from a range of disciplines, from biochemistry to physiology, from genetics to psychiatry, each with an insight, a piece of the puzzle. Jamaican Gold presents research and argument, history and biography - and much more - for the specialist and the sports fan, for the academic and the coach, in one attractive, easy-to-read volume, packed with photographs and illustrations, including a special section of memorable photos of the heroes of yesteryear and today. With Jamaican Gold to hand, the London Olympics will be just as thrilling, and you'll be closer to answering the question: Why do those Jamaicans run so fast?

Book excerpt: Following on from the CGIAR study by Evenson and Gollin (published by CABI in 2003), this volume provides up-to-date estimates of adoption outcomes and productivity impacts of crop variety improvement research in sub-Saharan Africa. The book reports on the results of the DIIVA Project that focussed on the varietal generation, adoption and impact for 20 food crops in 30 countries. It also compares adoption outcomes in sub-Saharan Africa to those in South Asia, and guides future efforts for global agricultural research
