La comida es cultura cuando se prepara, porque, una vez adquiridos los productos básicos de su alimentación, el hombre los transforma mediante el uso del fuego y una elaborada tecnología que se expresa en la práctica de la cocina. La comida es cultura cuando se consume, porque el hombre, aun pudiendo comer de todo, o quizá justo por ese motivo, en realidad no come de todo, sino que elige su propia comida con criterios ligados ya sea a la dimensión económica y nutritiva del gesto, ya sea a valores simbólicos de la misma comida. De este modo, la comida se configura como un elemento decisivo de la identidad humana y como uno de los instrumentos más eficaces para comunicarla.
