Available in PDF, EPUB and Kindle. Book excerpt: Mark F. Sohn’s classic book, Mountain Country Cooking, was a James Beard Award nominee in 1997. In Appalachian Home Cooking, Sohn expands and improves upon his earlier work by using his extensive knowledge of cooking to uncover the romantic secrets of Appalachian food, both within and beyond the kitchen. The foods of Appalachia are the medium for the history of a creative culture and a proud people. This is the story of pigs and chickens, corn and beans, and apples and peaches as they reflect the culture that has grown from the region’s topography, climate, and soil. Sohn unfolds the ways of a table that blends Native American, Eastern European, Scotch–Irish, black, and Hispanic influences to become something new—and uniquely American. Sohn shows how food traditions in Appalachia have developed over two centuries from dinner on the grounds, church picnics, school lunches, and family reunions as he celebrates regional signatures such as dumplings, moonshine, and country ham. Food and folkways go hand in hand as he examines wild plants, cast-iron cookware, and the nature of the Appalachian homeplace. Appalachian Home Cooking celebrates mountain food at its best. In addition to a thorough discussion of Appalachian food history and culture, Sohn offers over eighty classic recipes, as well as mail-order sources, information on Appalachian food festivals, photographs, poetry, a glossary of Appalachian and cooking terms, menus for holidays and seasons, and a list of the top 100 Appalachian foods.

Available in PDF, EPUB and Kindle. Book excerpt: Come an’ Get It was the most familiar and welcome call on the range era of the great trail drives following the Civil War. In this entertaining volume, Ramon F. Adams, author of the popular Western Words, tell the story of the old cowboy cooks, and the result is another highly original contribution to the folklore of the cattle country. Although the cowboy cleared the Southwestern frontier of savage Indians and opened the land for settlement, the cook and his commissary contributed greatly to the success of the operation; for as an army depends upon its mess-kitchens, so the cowboys depended upon the chuck wagon. Without it, there would have been to trail drives to rescue Texas from bankruptcy following the Civil War, no roundups to speed the development of the cattle industry, and no beef for the heavily populated areas of the United States. The author records the place and influence of the range cook upon Western life. He discusses the functions of “coosie,” the food he served, and his methods of preparing it-giving recipes for sourdough biscuits, fluff-duffs, son-of-a-bitch stew, and other distinctive dishes of the range. He describes, too, “the wagon,” its evolution, and its place in the hearts of the men who called it home. Although there remain a few chuck wagons on the larger ranches today, they have become so scarce that one is rarely seen except in a museum or a rodeo parade, and the younger generation of cooks, like the cowboys themselves has been tamed. Every cook was a “character,” perhaps with reason, for no man ever worked under greater difficulties or with fewer conveniences. Anecdotes and incidents which illuminate the idiosyncrasies of these “Sultans of the Skillets” are recounted with gusto. Nick Eggenhofer’s drawings help Mr. Adams bring the cook and his accoutrement vividly to life.

Available in PDF, EPUB and Kindle. Book excerpt: Almost 100 recipes celebrating the cowboy lifestyle, plus cooking secrets, photos & stories from real cowboy cooks, ranchers & locals across North America. Life in the saddle, on the trail, and in the outback has forged a style of living that cowboy-turned-chef Grady Spears calls the Cowboy Way. In Cooking the Cowboy Way, he takes you on a journey around the country to amazing places full of food, history, and people who have an appreciation for the land. These places where life and living (and that always includes cooking and eating) come alive in the spirit of the cowboy. In Cooking the Cowboy Way, you’ll have a ringside seat at the rodeo as Grady wrestles down new recipes from some incredible cowboy cooks and kitchen wranglers who know what hungry cow folks want to eat. And in the process, you’ll be carried away by the magic of starry nights by the campfire and seduced by the heritage of the chuck wagon and ranch kitchens, where the menus are still stoked by the traditions of the Old West just as they have been for a century or more. Cowboys live life by a simple code that is shared through their rustic lifestyles and the delicious recipes found in Cooking the Cowboy Way. Cowboy cooks, ranchers, and locals from across North America share their recipes, cooking secrets, photos, and stories about their unique and proud way of life. From the Lone Star State to the Grand Canyon State, and from Florida to Alberta, Canada, cowboys have a way with the land and the food that comes form it. Each chapter focuses on a different location, including the Wildcatter Cattle Ranch in Graham, Texas; the Bellamy Brothers Ranch in Darby, Florida; the Homeplace Ranch in Alberta, Canada; Rancho de la Osa in Tucson, Arizona; and more. Praise for Cooking the Cowboy Way “Cooking the Cowboy Way is not a guide to old-fashioned ranch and trail grub. And that’s a good thing. The book is an homage to the cowboy legacy, which Spears finds evolving on the nation’s ranches.” —Dallas Morning News “[Grady Spears and June Naylor] went all over the country, with a heavy emphasis on Texas, of course, drawing inspiration from cooks on and around ranches large and small. They then took these recipes and adapted them for regular kitchens and modern uses (i.e., dinner parties and backyard cooking). The results sound great.” —Texas Monthly
