Book excerpt: Essential oils extracted by the distillation or hydrodistillation of aromatic plants are a complex mixture of volatile compounds with several biological activities. Their efficacy as antimicrobial agents is related to the activity of several natural compounds belonging to different chemical families that can act both in synergy with each other and with other antibiotics. The antibiotic resistance detected among pathogens has been quickly increasing in recent years, and the control of some of these microorganisms is becoming a planetary emergency for human and animal health. The control of the microbial growth is a problem of great importance also for the food industry (food deterioration and shelf life extension) and for the world of cultural heritage (indoor and outdoor phenomena of biodeterioration). Essential oils can play an important role in this scenario, due their recognized broad-spectrum antimicrobial activity. Therefore, the main subject of this Special Issue includes an essential oil-based approach to control microrganisms in areas such as human and veterinary medicine, entomology, food industry and agriculture. In addition, the chemical composition of essential oils from endemic and rare medicinal/aromatic plants, nanoformulations of essential oils, applications in human and veterinary medicine and its use as animal feeding supplements are topics covered in this Special Issue

Book excerpt: Over the years, natural products such as essential oils have been gaining more and more prominence due to their perceived health benefits. Plants rich in essential oils represent a viable source of biomolecules for use in the most varied human activities, such as agricultural, cosmetic, and pharmaceutical applications. Essential oils are natural volatile fractions extracted from aromatic plants that are formed by classes of substances such as fatty acid esters, mono and sesquiterpenes, phenylpropanoids, and aldehyde alcohols, and in some cases, aliphatic hydrocarbons, among others. In this context, this book includes twelve chapters that present new information on the extraction and application of essential oils in various industrial segments. It is divided into three sections that discuss the general concepts of essential oils and techniques for their extraction, topics in food science and technology, and essential oils and their pharmacological properties in various activities and applications.

The most important message is to have native foods which contain high amount of active compounds that can be used as a medicinal plant. Most pharmaceutical drugs were discovered from plants, and still ongoing research will have to predict such new active compounds as anti-diseases. I do believe this book will add significant knowledge to medical societies as well as can be used for postgraduate students.

Book excerpt: The material presented in this book deals with basic mechanisms of free radical reactions in autoxidation processes and anitoxidant suppression of autoxidation of foods, biochemical models and biologi cal systems. Autoxidation in foods and corresponding biological effects are usually approached separately although recent mechanistic developments in the biochemistry and free radical chemistry of per oxides and their precursors tend to bring these two fields closer. Apparent ability of antioxidants in diets to reduce the inci dence of cancer has resulted in scrutiny of autoxidized products and their precursors as possibly toxic, mutagenic and carcinogenic agents. Mechanisms of any of these effects have been barely ad dressed. Yet we know now that free radicals, as esoteric as they were only a few decades ago, are being discovered in foods, biochem ical and biological systems and do play a role in the above-mentioned causalities. The purpose of the Workshop and the resulting book was to give a unifying approach towards study of beneficial and deleterious effects of autoxidation, based on rigorous scientific considerations. It is our hope that the material presented in this book will not only provide a review of the "state of the art" of autoxidation and anti oxidants, but also reflect the interaction which occurred during the Workshop between workers using model sytems, and food and biological systems.
