The Trafficking Victims Protection Act of 2000 (TVPA) was designed to reduce the use of child and forced labor in the production of goods consumed in the United States. The Act was reauthorized in 2003, 2005, and 2008. In response to provisions of TVPA, the the Bureau of International Labor Affairs requested that the National Research Council organize a two-day workshop. The workshop, summarized in this volume, discusses methods for identifying and organizing a standard set of practices that will reduce the likelihood that persons will use forced labor or child labor to produce goods, with a focus on business and governmental practices.

Since its inception in Moga, Nestlé has been working with its milk farmers and ancillary suppliers towards improving quality and productivity. The study presented in this book (carried out by the Third World Centre for Water Management, Mexico) highlights Nestlé’s way of doing business through its philosophy of Creating Shared Value (CSV) and how it contributed to the development of the region over the past 50 years through direct and indirect employment, steady income for milk and other suppliers, and technology transfer. The main objective of the study is to learn to what extent has Nestlé contributed to fulfilling the societal aspirations and expectations of the people working in and around its factory in terms of employment generation, poverty alleviation, general improvements in the community’s standards of living and environmental conservation. The study also tried to determine to what extent has the company created shared value for itself, milk farmers, ancillary firms, and the community at large. Traceability is undertaken primarily at the administrative level, where the use of advanced analytical tools is not available. Nevertheless, the determination of geographical origin is a requirement of the traceability system for the import and export of foodstuffs (EU regulation 178/2002). The topics covered in this book include the history of traceability; legislations and rules; the actual traceability techniques and the potential analytical techniques for food traceability such as molecular methods (e.g. DGGE, SSCP), next generation sequencers (NGS), bio-captors, chromatographic techniques, isotopic analysis that are used for discrimination of organic food, fish, oils. The chromatographic techniques help in the use of volatile compounds analysis. The isotope analysis helps in distinguishing between chicken meat and vegetable oils.
