The genetic structure responsible for the neoplasmic transformation of plant cells in crown galls is a bacterial plasmid (called Ti for tumor-inducing). Research described in this volume demonstrates that these Ti plasmids were designed by evolution as natural gene vectors with which some bacteria can introduce active genes into plants. These transferred genes are maintained by integration in the plant genome and their expression is directly or indirectly responsible for the tumorous growth pattern.

Yet it took a few more decades to show that ethylene is a naturally occurring product of plants having all the characteristics of a phytohormone. Ever since much effort has been devoted to a wide variety of physiological and biochemical problems relevant to ethylene. A first meeting was organized in Israel in 1984 to bring together many people active in this rapidly expanding field of experimental research. Speakers were invi ted and their contri buti ons ordered ina number of sessions, each of which was centered on a particular topiC. All of these colleagues are recognized leaders in ethylene research today and the organizers owe a very special gratitude to them for their substantial contribution to the programme. The in creased interest is probably based on the evidence that effective management of many plant diseases is, for the most part, contingent upon a clear understanding of the nature of host-parasite interactions. This intensified research effort calls for a greater number of books, such as this one, designed to compile, synthesize, and evaluate widely scattered pieces of information on this subject. The study of host-parasite interactions concerns the struggle between plants and pathogens, which has been incessant throughout their coevolution. Such in teractions are often highly complex. Pathogens have developed sophisticated of fensive systems to parasitize plants, while plants have evolved diversified defen sive strategies to ward off potential pathogens. In certain cases, the outcome of a specific host-parasite interaction seems to depend upon the presence or efficacy of the plant's defense system. A plant may become diseased when a parasite manages to invade it, unhindered by preexisting defense systems and/or without eliciting the plant's induced resistance response(s). Absence of disease may re flect the inability of the invading pathogen to overcome the plant's defense sys tem(s).

It had been preceded by Advanced Study Institutes at Porte Conte, Sardinia in 1975 and at Cape Sounion, Greece in 1981. In recent years, methods for the manipulation and transfer of genes have revolutionized our understanding of gene structure and function. It was thus opportune to bring together scientists from distinct disciplines, e. g. plant pathology, cytology, biochemistry and molecular biology to discuss our present understanding of cellular interactions between plants. We also explored how the potential offered by the newer molecular technologies could best be realized. It soon became evident at the Workshop, and is a repeated theme of this publication, that future research will need concentrated multi disciplinary programmes. Many of the new approaches will be valuable. For example, immunocytochemistry does, for the first time, allow molecules to be located precisely within infected tissues. Equally, the methods of DNA isolation and gene transformation will facilitate the isolation and characterization of genes associated with pathogenesis and specificity. The description at the Workshop of immunocytochemical protocols and of transformation systems for pathogenic fungi have already stimulated an upsurge in research on plant-pathogen relationships. The papers discuss many interactions between plants and fungal and bacterial pathogens, but also provide a comparison with mycorrhizal and symbiotic relationships, and those involving mycoparasites.

The partial or complete dissociation of one cell from another is an integral process of differentiation. Partial cell separations are basic physiological components of the overall programme of plant development. Complete cell separations are major events in the ripening of fruits, and the shedding of plant parts. Unscheduled cell separations commonly occur when tissues are subjected to pathogenic invasion. Environmental stresses too, evoke their own separation responses. Over the past five years much new knowledge has been acquired on the regulation of gene expression in specific stages of cell differentiation. Specific molecular markers have been identified that designate the competence of cells for achieving separation. Certain of the chemical signals (hormones, elicitors) that must be emitted or perceived by cells to initiate and sustain separation, are now known to us, and the resulting cell wall changes have come under close chemical scrutiny. The Turin meeting was a focus for those currently involved in such investigations. It assessed factors controlling cell separation in a wide spectrum of different cell types under a variety of conditions.

Among the "Top 10" innovations, controlled atmosphere packaging (CAP) for fruits and vegetables was listed 5th in order of importance. Of course, CAP is a forerunner of MAP (modified atmosphere packaging) in which a variety of food products are packaged under selective mixtures of atmospheric gases, but without the on-going maintenance (control) of the gas mixture. Development of packaging systems and films that are selectively permeable to specific gases has been the key element in the commercialization of controlled and modified atmosphere packaging of foods. It may not be far from the truth to say that since then there has been an explosion of activities around MAP/CAP, especially in research and development into various aspects of this technology. The application of MAP to some bakery products, fresh fruits and salads and fresh meats and meat products has reached a significant level both in Europe and North America. The increasing consumer demand for fresh or near-fresh products and convenient, microwavable foods has added impetus to the growth of MAP/CAP technology. It is, therefore, timely that a comprehensive book that provides scientific background and practical applications of the technology should be written.

Subsequent evolution through the Bronze and Iron Ages up to our present technologically advanced society has hardly diminished the importance of wood. Today, its role as a source of paper products, furniture, building materials, and fuel is still of major significance. Wood consists of a mixture of polymers, often referred to as lignocellulose. The cellulose micro fibrils consist of an immensely strong, linear polymer of glucose. They are associated with smaller, more complex polymers composed of various sugars called hemicelluloses. These polysaccharides are embedded in an amorphous phenylpropane polymer, lignin, creating a remarkably strong com posite structure, the lignocellulosic cell wall. Wood also contains materials that are largely extraneous to this lignocellulosic cell wall. These extracellular substances can range from less than 1070 to about 35% of the dry weight of the wood, but the usual range is 2% -10%. Among these components are the mineral constituents, salts of calcium, potassium, sodium, and other metals, particularly those present in the soil where the tree is growing. Some of the extraneous components of wood are too insoluble to be ex tracted by inert solvents and remain to give extractive-free wood its color; very often these are high-molecular-weight polyphenolics.
