Book excerpt: A New York Times Editors’ Choice An “essential” (Jane Mayer) account of the dangerous marriage of plutocratic economic priorities and right-wing populist appeals — and how it threatens the pillars of American democracy. In Let Them Eat Tweets, best-selling political scientists Jacob S. Hacker and Paul Pierson argue that despite the rhetoric of Donald Trump, Josh Hawley, and other right-wing “populists,” the Republican Party came to serve its plutocratic masters to a degree without precedent in modern global history. To maintain power while serving the 0.1 percent, the GOP has relied on increasingly incendiary racial and cultural appeals to its almost entirely white base. Calling this dangerous hybrid “plutocratic populism,” Hacker and Pierson show how, over the last forty years, reactionary plutocrats and right-wing populists have become the two faces of a party that now actively undermines democracy to achieve its goals against the will of the majority of Americans. Based on decades of research and featuring a new epilogue about the intensification of GOP radicalism after the 2020 election, Let Them Eat Tweets authoritatively explains the doom loop of tax cutting and fearmongering that defines the Republican Party—and reveals how the rest of us can fight back.

Available in PDF, EPUB and Kindle. Book excerpt: "In May 1970, four days after Kent State, construction workers chased students through downtown Manhattan, beating scores of protesters bloody. As hardhats clashed with hippies, it soon became clear that something larger was underway- Democrats were at war with themselves. In The Hardhat Riot, David Paul Kuhn tells the fateful story of when the white working class first turned against liberalism, when Richard Nixon seized the breach, and America was forever changed. It was unthinkable one generation before: FDR's "forgotten man" siding with the party of Big Business and, ultimately, paving the way for presidencies from Ronald Reagan to Donald Trump. This is the story of the schism that tore liberalism apart. In this riveting story- rooted in meticulous research, including thousands of pages of never-before-seen records- we go back to a harrowing day that explains the politics of today. We experience an emerging class conflict between two newly polarized Americas,m and how it all boiled over on one brutal day, when the Democratic Part's future was bludgeoned by its past."--

Available in PDF, EPUB and Kindle. Book excerpt: Men in hardhats were once the heart of America’s working class; now it is women in scrubs. What does this shift portend for our future? Pittsburgh was once synonymous with steel. But today most of its mills are gone. Like so many places across the United States, a city that was a center of blue-collar manufacturing is now dominated by the service economy—particularly health care, which employs more Americans than any other industry. Gabriel Winant takes us inside the Rust Belt to show how America’s cities have weathered new economic realities. In Pittsburgh’s neighborhoods, he finds that a new working class has emerged in the wake of deindustrialization. As steelworkers and their families grew older, they required more health care. Even as the industrial economy contracted sharply, the care economy thrived. Hospitals and nursing homes went on hiring sprees. But many care jobs bear little resemblance to the manufacturing work the city lost. Unlike their blue-collar predecessors, home health aides and hospital staff work unpredictable hours for low pay. And the new working class disproportionately comprises women and people of color. Today health care workers are on the front lines of our most pressing crises, yet we have been slow to appreciate that they are the face of our twenty-first-century workforce. The Next Shift offers unique insights into how we got here and what could happen next. If health care employees, along with other essential workers, can translate the increasing recognition of their economic value into political power, they may become a major force in the twenty-first century.

Book excerpt: This volume of the Trilogy of Traditional Foods, part of the ISEKI Food Series, describes important aspects of the production of foods and beverages from all over the globe. The intention of this volume is to provide readers with an appreciation of how products were initially made, and which factors have shaped their development over time. Some modern products have remained local, while others are commodities that appear in peoples’ cabinets all over the world. Modernization of Traditional Food Processes and Products is divided into two sections. The first section focuses on products originating in Europe, while the second section is a collection of products from the rest of the world. Each chapter describes the origin of a particular food or beverage and discusses the changes and the science that led to the modern products found on supermarket shelves. The international List of Contributors, which includes authors from China, Thailand, India, Argentina, New Zealand, and the United Kingdom, attests to the international collaboration for which the ISEKI Food Series is known. The volume is intended for both the practicing food professional and the interested reader.

Available in PDF, EPUB and Kindle. Book excerpt: As antibacterial compounds, bacteriocins have always lived in the shadow of those medically important, efficient and often broad-spectrum low-molecular mass antimicrobials, well known even to laypeople as antibiotics. This is despite the fact that bacteriocins were discovered as early as 1928, a year before the penicillin saga started. Bacteriocins are antimicrobial proteins or oligopeptides, displaying a much narrower activity spectrum than antibiotics; they are mainly active against bacterial strains taxonomically closely related to the producer strain, which is usually immune to its own bacteriocin. They form a heterogenous group with regard to the taxonomy of the producing bacterial strains, mode of action, inhibitory spectrum and protein structure and composition. Best known are the colicins and microcins produced by Enterobacteriaceae. Many other Gram-negative as well as Gram-positive bacteria have now been found to produce bacteriocins. In the last decade renewed interest has focused on the bacteriocins from lactic acid bacteria, which are industrially and agriculturally very important. Some of these compounds are even active against food spoilage bacteria and endospore formers and also against certain clinically important (food-borne) pathogens. Recently, bacteriocins from lactic acid bacteria have been studied intensively from every possible scientific angle: microbiology, biochemistry, molecular biology and food technology. Intelligent screening is going on to find novel compounds with unexpected properties, just as has happened (and is still happening) with the antibiotics. Knowledge, especially about bacteriocins from lactic acid bacteria, is accumulating very rapidly.

Book excerpt: Patent literature has always been a mine of information, but until recently, it was difficult to access. Now, with the Internet, access to all patent documents is almost instantaneous and free. However, interpreting the technical information provided by patent literature requires a certain skill. This monograph aims to provide that skill by explaining patent jargon and providing background information on patenting. Patents dealing with edible oil processing are used to explain various aspects of patenting. To make the explanations less impersonal, some have been larded with personal remarks and experiences. Accordingly, this monograph is intended for scientists and engineers dealing with edible oils and fats who want to extend their sources of technical information. Hopefully, it will inspire them to innovate, help them to avoid duplication, and provide them with some amusement.
