Book excerpt: Dans le cadre du projet ADD-AQDUC, nous avons cherché à identifier des déterminants sociologiques susceptibles d'être pris en compte dans le choix d'un dispositif de qualification sanitaire. Les contraintes et les coûts importants susceptibles d'être associés à un dispositif de maîtrise collective de la santé des animaux d'élevage rendent en effet nécessaire l'étude des attentes des différents acteurs de la filière bovine en ce qui concerne la qualification sanitaire en élevage. Nous avons procédé à une étude documentaire de l'évolution de la gestion de la santé animale en France au cours du temps, puis à une étude des données existantes sur les attentes des acteurs de la filière bovine concernant la gestion sanitaire des cheptels et les démarches de qualification de manière générale. Nous avons ensuite établi des hypothèses, vérifiées et complétées par une enquête de terrain. Nous avons mené en collaboration avec une étudiante de sociologie 31 entretiens, répartis de l'amont de l'élevage au secteur de la transformation. Nos conclusions portent sur les conditions d'utilisation de la qualification sanitaire comme outil d'amélioration technique de l'élevage, l'intérêt d'établir les démarches de qualification en fonction des problématiques des entreprises de collecte et de transformation, ainsi que sur la difficulté de communiquer avec le consommateur sur ces démarches. Ces conclusions pourraient donner lieu à des études approfondies, ciblées sur les niveaux de la filière concernés, pour produire des outils sociologiques de conception et d'évaluation des dispositifs de qualification sanitaire.
