Are low-income households generally willing and able to budget for healthful foods like fruits and vegetables, or are other goods and services, including other foods, more of a priority? For six out of seven selected types of food, households with an income below 130% of the poverty line spend less money than higher income households. However, these households, when given a small increase in income, will allocate more money to only two out of the seven products, beef and frozen prepared foods. These foods may be priorities for reasons of taste and convenience. For additional money to be allocated to fruits and vegetables, a household¿s income needs to be slightly greater than 130% of the poverty line. Charts and tables.

Book excerpt: In FY 2007, the Food Stamp Program provided $30 billion in nutrition assistance benefits to 26 million individuals. The diets of many low-income individuals, like the U.S. population overall, do not meet federal dietary guidelines. One potential strategy for increasing the purchases of targeted foods that contribute to a healthy diet is to incorporate into the program financial incentives for purchasing these foods. This report identifies: (1) what is known about the effectiveness of financial incentives and other approaches intended to increase the purchase of targeted foods; (2) the key factors to consider in designing a financial incentive program; and (3) options available to the Food and Nutrition Service for implementing financial incentives. Available in PDF, EPUB and Kindle. Book excerpt: A new report shows that federal policies impede farmers' ability to make fruits and vegetables more widely available and affordable. The report provides policy recommendations to help farmers to grow and distribute fruits and vegetables and emphasizes that many of the recommended changes could be made by the U.S. Department of Agriculture without the need for additional direction from Congress. However, if such policy amendments do not occur, action in the next Farm Bill may be required. The report recommends the government provide crop insurance for fruits and vegetables and disaster assistance coverage equivalent to that provided for farmers who grow non-perishable commodities; explore policy changes enabling farmers participating in the commodity programs to use program acres for planting fruits and vegetables; and encourages farmers, public health leaders and consumer advocates to identify ways to increase demand for fruits and vegetables in order to keep pace with increases in supply.

Book excerpt: This book investigates the relationships between economies of scale in food consumption and a number of socio-economic and demographic characteristics of households and household behavioural choices since food is the major share of household expenditure for poor households. The characteristics considered comprise household size, location, income, and gender of the head of household while the behavioural choices considered comprise the decision to consume home-grown food and the decision to adopt domestic technology to aid food preparation and consumption. The book proposes two theoretical models to rationalize the role of the consumption of home-grown food and the adoption of domestic technology in enhancing economies of scale in food consumption. Econometric models are also used to empirically test the validity of the two theoretical models while adjusted poverty estimations are derived numerically using the estimated equivalence scales. Although data used in applying these techniques are based on four Household Income and Expenditure Surveys conducted by the Department of Census and Statistics (DCS) in Sri Lanka, the methodology can be used for similar analysis in relation to any other country.

Available in PDF, EPUB and Kindle. Book excerpt: Barasi's Human Nutrition: A Health Perspective, Third Edition, provides a comprehensive introduction to the principles and practice of nutrition. Thoroughly revised, restructured, and updated, this new edition presents up-to-date scientific information in an accessible and reader-friendly format, emphasising how important nutrition is for evidence across the full translational health spectrum, from epidemiology and basic sciences through clinical and public heath applications, and ultimately into sustainable public policy. This third edition places more emphasis on applied nutrition than previous editions. Specifically, sections relating to clinical nutrition, public health nutrition, and improving foods for better health are now separate chapters with new chapters on sport nutrition, obesity, and weight management, and each section has a dedicated table of contents to better highlight the subject covered. The book also focuses on nutritional issues related to globally important, potentially preventable, major diseases, such as coronary heart disease, cancer, and diabetes, and discusses methods for studying nutrition and relevant essential dietary principles for intervention. This textbook is written from the perspective of experienced teachers at the undergraduate and graduate levels and is an invaluable resource for students in health and nutrition and for those pursuing further qualifications in food science. While containing substantial detail on some interesting topics, this book is written in an ‘easy-read’ style, which makes potentially complicated subjects accessible to general readers as well as to the more specialised user. It provides both an entry-level introduction to human nutrition for introductory or intermediate undergraduate students and also sufficient comprehensive detail to serve as a reference book for Masters or PhD students.

This book was released on 2013-04-23 with total page 235 pages. Available in PDF, EPUB and Kindle. Book excerpt: For many Americans who live at or below the poverty threshold, access to healthy foods at a reasonable price is a challenge that often places a strain on already limited resources and may compel them to make food choices that are contrary to current nutritional guidance. To help alleviate this problem, the U.S. Department of Agriculture (USDA) administers a number of nutrition assistance programs designed to improve access to healthy foods for low-income individuals and households. The largest of these programs is the Supplemental Nutrition Assistance Program (SNAP), formerly called the Food Stamp Program, which today serves more than 46 million Americans with a program cost in excess of $75 billion annually. The goals of SNAP include raising the level of nutrition among low-income households and maintaining adequate levels of nutrition by increasing the food purchasing power of low-income families. In response to questions about whether there are different ways to define the adequacy of SNAP allotments consistent with the program goals of improving food security and access to a healthy diet, USDA's Food and Nutrition Service (FNS) asked the Institute of Medicine (IOM) to conduct a study to examine the feasibility of defining the adequacy of SNAP allotments, specifically: the feasibility of establishing an objective, evidence-based, science-driven definition of the adequacy of SNAP allotments consistent with the program goals of improving food security and access to a healthy diet, as well as other relevant dimensions of adequacy; and data and analyses needed to support an evidence-based assessment of the adequacy of SNAP allotments. Supplemental Nutrition Assistance Program: Examining the Evidence to Define Benefit Adequacy reviews the current evidence, including the peer-reviewed published literature and peer-reviewed government reports. Although not given equal weight with peer-reviewed publications, some non-peer-reviewed publications from nongovernmental organizations and stakeholder groups also were considered because they provided additional insight into the behavioral aspects of participation in nutrition assistance programs. In addition to its evidence review, the committee held a data gathering workshop that tapped a range of expertise relevant to its task.
